Three cities call it pizza and mean three completely different things.
In Philadelphia, tomato pie is sauce on thick focaccia, eaten at room temperature with no melted cheese on top. Bakeries like Sarcone's (open since 1918) and Iannelli's (1910) have been making it for a century. In New York it's the foldable slice, the one Dom DeMarco made by hand at Di Fara, one pie at a time, until 2022. In San Francisco the crust came first: naturally fermented dough that tastes like the Bay before it tastes like a topping.
Same word, three foods that barely belong on the same menu. We score the dishes, not the dining rooms.
