On our last day of waking up in the magical Sierra Nevada Mountains, I prepared an array on campfire meals to spoil these little campers one last time!

First up... my favorite: Breakfast Nachos with taco seasoned ground beef, shredded Parmesan, Jalapeños Sauce, diced onion & homemade guacamole over tallow

For dinner I grilled two steaks over Mesquite wood & whipped up some Shrimp Alfredo Sourdough Pasta in our kitchen for the little campers! And can't forget dessert at Mcleod Lake... Our favorite place in all of Mammoth... Purple Dragonfruit from

On this edition of campfire meals... I am beyond grateful to be cooking surrounded by the insanely beautiful Sierra Mountains! I may be off the food truck... But good lord I just can't stop cookin!!!

First up... My new take on onion rings but stuffed with Taco Seasoned Pasture Raised Ground Beef & wrapped in Free Range Bacon instead of the traditional flour egg wash. Crispy, hearty & addictive AF cuz you gotta get your veggies too 😉

We are beyond honored to be a part of Longfellow Elementary's end of the year celebration THIS WEDNESDAY from 4-7pm @ 4833 Doliva Dr in the heart of Clairemont... They cap off their school year every year with a salute to cultures all over the world! We are proud to be representing the island nation of Cuba by showcasing our Award Winning Cubano Panini, Arroz Con Pollo & Cilantro Lime Black Beans for all to enjoy! I'm giving myself 12 days to hike all 188 miles of the PCT from Mexico to Idyllwild. Walking to landmarks like Lake Morena, Mt. Laguna, Julian, San Felipe Valley, Eagle Rock, Paradise Valley & ultimately the little mountain town of Idyllwild...

I told my kids before I left... Do something hard while I'm gone... Push yourself... Because you never know what you're capable of... until you do it...

Food is really all about love when you think about it... Why do we start our days at sunrise picking the ripest tomatoes, searching for the freshest basil & sourcing from the most ethically responsible farms? Because we love creating that also supports an ethical world we want to be a part of... Seven years ago we got rid of every seed oil on our truck & earlier this year, we started sourcing all of our meats from Certified Free Range Farms... 1 Trail... 2 Countries... 3 Marathons (78 Miles)... And 5 Days of Hiking from the desert to the mountains all in this incredible place I am so fortunate to call home! I have a whole new respect now for our ancestors who must have endured all odds to survive, modern day backpackers who embody that ancestral spirit & venture out into the wilderness for weeks at a time, and of course, the raw, healing power of Mother Nature herself. I have a whole new appreciation now for showers, my often irritating children and my own warm bed. If you ever feel the need for a full mind & body reset... Look no further than the Pacific Crest Trail that starts right here in ... You never know just how far you could go 😉

Chef Blake here with an ephemeral cell phone signal from the middle of nowhere so I wanted to check in real quick... I am currently on an adventure the likes of which I have never done before. I was looking for a way to temporarily disconnect from this fast paced modern world to connect with my own thoughts & Mother Nature herself! I figured what better place to start this reset than in my own backyard! Inspired by ma man Cam I'll be hiking & camping along the longest continuous trail in America, the only one that takes you from Mexico to Canada, The Pacific Crest Trail. Starting at the Mexican Border, I'm giving myself 1 week to see how far north I can go! Huge thank you to the culinary crew & of course the wife for the blessings! Updates to follow 😉

Our Free Range chicken breast is wrapped up with homemade Brioche croutons, homemade Baja Caesar dressing, freshly shaved Parmesan, tomatoes, red onions & crunchy romaine all rolled up in a garden spinach tortilla! It feels good supporting Farm where every chicken has 24/7 access to sunlight, earth, bugs, worms, nuts, seeds, exercise & ultimately, freedom! This has been a long time coming but as of TODAY, I am proud to announce that the Simply Fresh Gourmet Food Truck & Catering Co. will from now on be sourcing, cooking & serving ONLY Free Range, Non GMO certified, Heritage Chicken & Pork that have ZERO hormones, steroids or additives of any kind. These chickens pictured above are from Mary's Farm in Hanford, CA & the pigs are from True Story's Room to Roam Farm in the Ozark Mountains of Missouri. They were all raised with 24/7 access to the outdoors and were all fed a 100% Non GMO diet when not grazing outside. I could no longer support the over industrialized prison meat factory system that has become way too pervasive in our country. That system is beyond broken & is terrible for the animals, the environment as well as ourselves. Yes this Free Range meat will cost us more than twice as much as conventional meat but it supports family farms that care about their animals & aligns with a future that we are proud to be a part of... Lastly, they taste amazing too so you gotta come try a or a ASAP 😉
