The season here at Ridgway State Park is winding down. In October, we begin our journey to Yuma, Arizona. We will begin setting up at the Yuma Farmer's Market on the 3rd Saturday in November.

We will be adding some new coffees and several new coffee drinks.

As an Artisan coffee roaster, I roast just enough coffee to sell out each week. Considering the rules below, ask yourself this: "Why are you purchasing Folgers, Staryuks, or any other major commercial brand? As a former Folgers employee, I know that their green beans probably fall within the 15-month rule for green coffee, but that is the only one of the 15 that they do.

Your local small coffee roaster most likely meets each rule.

Here is the 15-15-15 Coffee rule.

15 Months (Green Beans): Unroasted coffee beans should ideally be used within 15 months of harvest.

15 Days (Roasted Beans): Roasted beans should be consumed within 15 days of their roast date before they lose their vibrant aromatic notes.

15 Minutes (Ground Coffee): Ground coffee should be brewed within 15 minutes of grinding, as exposure to oxygen rapidly causes staling and flavor loss.

I am a different type of coffee roaster. When I worked at Folgers Coffee Company, they roasted by comparing the coffee being roasted to a sample of what they wanted to achieve.

I roast in a very similar way, but at a slower roasting time.

Here is the method most roaster follow:

Coffee roasting takes 8 to 16 minutes at temperatures between 350°F and 446°F (177°C to 230°C). The exact time and temperature depend on your target roast level:

Light Roast: 8–12 minutes, finished at 392°F–401°F (200°C–205°C).

Medium Roast: 10–14 minutes, finished at 410°F–428°F (210°C–220°C).

Dark Roast: 12–16 minutes, finished at 437°F–446°F (225°C–230°C).

My roasting method is slower, and that is the difference in when my coffee reaches the various darkness.
