Last weekend, the stove detached from our trailer wall and the propane line broke. So, no Praise the Lard Fried or Pork Fried Chicken sandwiches for a while. Another chapter in the ongoing adventures of hauling a kitchen everywhere we go.

Wouldn’t it be nice to not have to load up and haul a kitchen every time we want to serve delicious Virginia-style barbecue?

Maybe we should set up a brick and mortar.

We are.

Today we got the keys to the future home of Redemption BBQ and Market. If everything comes together, we’ll be selling our food truck takeout staples plus smoked meats and (not-just-barbecue) prepared meals at 3420 Lauderdale Drive. As always, our meats will be sourced from local, sustainable, and humane farms like Autumn Olive Farms and Farmer Focus.

Stay tuned as we set up shop!

From the RBBQ Test Kitchen: another take on beer braised pork shanks.

I always have a bunch of pork shanks left over from the whole shoulders I get from Autumn Olive Farms and I’m always looking for the best ways to use them.

This time I thickened some of the braising liquid with a dark roux, added green peas, and served over mashed potatoes. I think this was my best version yet. My only tweak would be to make the gravy a little thicker.

Without the peas and braising veggies, this would be awesome on Praise the Lard Fries.
