🌶️ Southwest Cabbage Salad 🥬
Ingredients:
Salad:
1 (16 oz) bag cabbage coleslaw mix
1 red bell pepper, diced
1 yellow bell pepper, diced
½ red onion, diced
1 jalapeño, deseeded and finely chopped
1⅓ cups frozen corn, thawed
1 (15 oz) can black beans, drained and rinsed
½ cup green onions, chopped
⅓ cup fresh cilantro, chopped
Dressing:
¾ cup sour cream
¼ cup water (or more to thin if needed)
Juice of 1 lime
2½ tbsp fresh cilantro, minced
2 tsp chili powder
1½ tsp salt
1½ tsp paprika
1 tsp ground cumin
1 tsp garlic powder
½ tsp black pepper
Directions:
In a large mixing bowl, combine the coleslaw mix, diced bell peppers, red onion, jalapeño, corn, black beans, green onions, and chopped cilantro. Toss until evenly mixed.
In a separate bowl, whisk together the sour cream, water, lime juice, minced cilantro, and all the spices until smooth and creamy. Adjust the water if needed to reach your desired dressing consistency.
Pour the dressing over the salad mixture and toss thoroughly until everything is well coated.
For the best flavor, cover and refrigerate for at least 30 minutes before serving. This gives the veggies time to soak up all that delicious Southwest flavor.
Serve chilled. Great as a side dish or spooned into tacos, wraps, or grain bowls!
