What an incredible Fourth of July Festival! We officially sold out of everything just before the fireworks started, and we couldn’t be more grateful for the support from this amazing community.

Our Brisket Tacos were the crowd favorite, with our BBQ Pork Nachos coming in a very close second! Seeing so many familiar faces and meeting so many new friends made this event one to remember.

Thank you to everyone who stopped by, grabbed a meal, shared a kind word, or supported our small business. We had an absolute blast and can’t wait to do it again.

While passing through Kansas City, we had the chance to stop at Slap’s Barbecue. As someone who leans toward Texas-style barbecue, I came away with mixed feelings.

First, I have to give them credit for efficiency. Compared to places like Truth Barbeque in Houston, where the line can become part of the experience, the wait at Slap’s was only a fraction of the time. We were in and out in about 20 minutes, and even had the opportunity to chat with a few employees about their approach to Kansas City-style barbecue.

The brisket was a little bland and didn’t have the bold beef flavor I was hoping for. The sausage was the biggest disappointment for me—it lacked the snap, bite, and color that I expect from a really good smoked sausage. On the other hand, the pulled pork was very good, and the turkey absolutely stole the show. It was moist, flavorful, and easily the standout meat of the meal.

For sides, we tried the macaroni and cheese, potato casserole, and baked beans. The mac & cheese was solid with no complaints. The potato casserole had good flavor, although it was a bit runny for my taste. The baked beans were heavily sauced, which seemed to fit the overall Kansas City approach.

Speaking of sauce, the entire meal came with enough barbecue sauce to fill a bottle. Personally, I believe great barbecue should be able to stand on its own without relying on sauce to carry it. But that’s part of the Kansas City style—sweeter, saucier, and definitely different from what I’m used to.

Overall, I’m glad we stopped and gave it a try. It may not have converted this Texas barbecue fan, but the friendly staff, quick service, and that outstanding turkey made the visit worthwhile.

Another weekend in the books at the Robertson County Fair BBQ Showdown! 🐷🔥

It was HOT… and definitely not the most comfortable weekend to be standing over smokers, but we worked hard and gave it everything we had.

We’ve been putting in a lot of work behind the scenes dialing in our rib recipe, and it finally paid off with a 4th Place Rib call! 🏆🍖 We’re proud of that one. Chicken and pork still landed in the middle of the pack, so now it’s back to the drawing board. Those categories are next.

Unfortunately, the Tennessee heat got the best of our dessert, and by turn-in time it had pretty much melted before it ever made it to the judges. That’s barbecue competition life sometimes. You celebrate the wins, learn from the losses, and keep moving forward.

Abigail was an absolute trooper this weekend. She caught some sleep in the truck while I camped out under the canopy trying to survive the heat. ❤️

After loading up and heading home, Abigail got to experience In-N-Out Burger for the very first time! I hadn’t had In-N-Out since my time stationed in California, so that was a fun way to end the trip.

Now we’re home, enjoying some much-needed air conditioning, getting cleaned up, and already thinking about the next cook. Time to cool off and start working on that chicken recipe.
