Classic shortbread recipe

Ingredients
- 1 cup unsalted butter (room temperature)
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1 teaspoon vanilla extract (optional)

Instructions
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a large bowl, cream the butter and sugar together until light and fluffy.
Mix in the salt and vanilla extract (if using).
Gradually add the flour, mixing until just combined. The dough should be soft and crumbly.
Turn the dough out onto a lightly floured surface and knead it gently until it comes together.
Roll the dough out to about 1/4 inch thickness. Use a cookie cutter or knife to cut the dough into desired shapes.
Place the shortbread shapes onto the prepared baking sheet.
Bake for 15-20 minutes, or until the edges are just starting to turn golden. Be careful not to overbake.
Allow the shortbread to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Puff puff or buns?
Puff puff is one of the best snacks in Nigeria that is amazing to me, especially hot puff puff 😋
It is very easy to make and at the same time somehow hard for non bakers or even some Baker

Nourish puff puff recipe
1: 500g of flour
2: 1 1/2 tablespoon of active dry yeast
3: 175g of sugar
4: 1 tablespoon of pepper (optional)
4: 1/2 cup of powdered milk (optional)
5: pinch of salt
6: Water 2 cups or more (if required)
7: oil for frying

Procedure
1- in a clean bowl, add in your sieved flour, sugar, salt, milk, pepper and yeast
2: add in your water and mix well
3: cover and allow it to rise for 45 minutes - 1 hour
4- Fry on a medium heat (ensure you fry with enough oil so that it will come out well)

**Banana Date, Strawberry Basil, and Pineapple Coconut Smoothies**

# # # # Ingredients:
- **Banana Date Smoothie:**
- 1 ripe banana
- 2 soft dates, pitted
- 1/2 cup almond milk

- **Strawberry Basil Smoothie:**
- 1/2 cup fresh strawberries
- 2 basil leaves
- 1/2 cup water

- **Pineapple Coconut Smoothie:**
- 1/2 cup pineapple chunks
- 1/4 cup coconut cream
- 1/4 cup coconut water

1. Blend the ingredients for each smoothie until smooth and creamy.
2. Pour the banana date smoothie into the first glass, garnished with a slice of banana and a small date.
3. Pour the strawberry basil smoothie into the second glass, topped with a basil leaf and half a strawberry.

Creamy Spinach & Shrimp Stuffed Salmon

Ingredients:

For the Stuffing:

1/2 cup cooked shrimp, chopped
1 cup fresh spinach, chopped
4 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1/4 tsp salt
1/4 tsp black pepper
For the Salmon:

4 salmon fillets (6 oz each), skinless
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
Steps:

Prepare the Stuffing:

In a bowl, mix shrimp, spinach, cream cheese, Parmesan cheese, garlic, salt, and pepper until well combined.
Prepare the Salmon:

Preheat oven to 375°F (190°C).
Using a sharp knife, cut a pocket into the side of each salmon fillet, being careful not to cut all the way through.
Season the fillets with salt, pepper, and paprika.
Stuff the Salmon:

Fill each salmon pocket with the shrimp and spinach mixture. Use toothpicks to secure the opening if necessary.
Cook the Salmon:

Heat olive oil in a skillet over medium heat. Sear the stuffed salmon fillets for 2–3 minutes per side, until lightly browned.
Transfer the fillets to a baking dish and bake for 12–15 minutes, or until the salmon is cooked through and flakes easily.
Serve:

Remove toothpicks if used and serve hot. Pair with roasted vegetables or a fresh salad for a complete meal.

Yam porridge

Ingredients:
White yam (1kg)
Habanero pepper
2 tablespoonful crayfish
Smoked fish, meat, chicken or your preferred choice (optional)
1 medium size onion
Red oil (palm oil)
2 stock cube seasoning
salt to taste
Vegetables ( pumpkin or spinach)

Directions:

-Peel and cut the yam into desired cube sizes, wash and place in a pot
-Wash and cut the onion and vegetables into tiny pieces.
-Grind the pepper and debone the smoked fish.
-Add enough water to cover the yam cubes and cook at a medium heat.
-When the yam starts boiling, add the grounded crayfish, habanero pepper, onion, stock cubes and palm oil.
-Add salt and continue cooking until the yam is soft as desired.
-When the yam is cooked, add the vegetable and stir very well with a wooden spoon until the liquid thickens.

**PINEAPPLE MANGO SMOOTHIE** 🍍🥭😋

**Ingredients:**
- 1 banana 🍌
- 1 cup pineapple chunks 🍍
- 1 cup mango chunks 🥭
- 1/4 cup yogurt (optional for creaminess) 🥛
- 1 cup almond milk (or your preferred milk) 🥤
- Ice cubes ❄️

**Instructions:**
1. Peel and slice the banana.
2. Add banana, pineapple, mango, yogurt, and almond milk to a blender.
3. Blend until smooth and creamy.
4. Toss in some ice cubes and blend again for a refreshing chill.
5. Pour into a glass, sip, and enjoy!

Fish 😋😋😋
Remove the scales bulumgi
do the gutting process (remove the intestines)
Rinse in water n wash till water is clear
Cut into yo desired pieces
In a pan heat oil, add onions n fry till Golden brown
Add tomatoes n eggplants, cover n let it simmmer for 5minutes(till the tomatoes are paste like)
Add water season with salt to taste n stir
Next, yo fish pieces one at a time, green pepper n carrots,
Don't forget To mix n add royco n simba
cover n let it simmmer on medium heat until the fish is flaky n thoroughly cooked😋
