Quick Pickled Veggies 🥕🌶️

I just made this, loving my big jars! One of those simple kitchen staples that makes everything better. These crisp, tangy vegetables are perfect for snacking straight from the jar, adding to salads, serving alongside dips, piling onto sandwiches, or giving a meal a little extra brightness.

For this batch I used:

* ½ head cauliflower, chopped
* 1 extra-large carrot, sliced
* 1 red bell pepper, chopped
* 1 orange bell pepper, chopped
* 6–8 banana peppers chopped
* Bay leaves
* Black peppercorns
* Garlic, optional — and normally I would add it, but I completely forgot this time because I was also making dinner and roasting peppers at the same time. 😂

For the brine:

2½ cups filtered water
1¾ cups organic apple cider vinegar
2 tablespoons salt — I used pickling salt, but sea salt or Celtic salt also work
3 tablespoons sugar or sweetener of choice

Wash and chop your vegetables and place them into a clean, heatproof jar with the bay leaves, black peppercorns, and garlic if using.

Bring the water, apple cider vinegar, salt, and sugar to a boil, then carefully pour the hot brine over the vegetables until they’re covered.

Allow the jar to cool before covering it with a lid and transferring it to the refrigerator.

They’ll be ready to enjoy after about 24 hours, but I think they’re even better after 48 hours when everything has had more time to soak up that brine.

Simple ingredients. A little prep. And another delicious way to keep real food ready to grab from the refrigerator. 🌿

Remember to always label your prepared foods with the date, food safety is essential.

These are refrigerator pickled vegetables and should remain refrigerated.

Caregiver Support Tea 🌿💜

Caregivers spend so much of their lives pouring into everyone else. Sometimes we need a gentle reminder to pour a little of that care back into ourselves, too.

As a caregiver myself, I created this Caregiver Support Tea as a simple, nourishing blend for those moments when you need to slow down, breathe a little deeper, and give your mind and body an opportunity to soften.

With chamomile, lavender, lemon balm, oatstraw, tulsi, rose petals and passionflower, this blend brings together herbs traditionally used to support relaxation, restful sleep, emotional well-being and the nervous system. I also love adding a little spearmint when I want a fresh, uplifting note. 🌿

My tea-making method is intentionally gentle. I bring my filtered water to a boil, turn off the heat, and then allow the herbs to steep off heat for 10–15 minutes rather than continuously boiling them. Strain, sweeten if desired, and enjoy warm or chilled.

But perhaps my favorite part of this recipe isn’t an ingredient at all.

It’s the pause.

The few minutes spent preparing something intentionally for yourself. Sitting down. Holding a warm cup. Breathing. Allowing yourself to receive some of the care you so freely give everyone else.

As caregivers, our responsibilities don’t disappear because we make ourselves a cup of tea. But these small rituals can remind us that we belong on the list of people we’re caring for, too. 💜

Papaya is one of those fruits that is easy to overlook, but it has so much to offer. 🌿

It’s naturally sweet, refreshing, and incredibly versatile,but one of the things I appreciate most about papaya is how supportive it can be for digestion.

Papaya contains fiber, which helps support regularity and digestive health, along with papain, a natural enzyme that helps break down protein. That makes papaya a beautiful fruit to include when you’re thinking about supporting your gut through simple, whole foods.

It also provides vitamin C, folate, carotenoids, and plenty of water, so it brings hydration and nourishment at the same time.

And the best part? There are so many easy ways to enjoy it: on its own, with lime, in smoothies, fruit bowls, chia pudding, overnight oats, tropical salsa, or even juiced.

Wellness doesn’t always have to come from something complicated. Sometimes it looks like learning what your food has to offer and using it in simple ways that support your body.

Sunshine Tonic Juice 🌞

Sometimes living more intentionally really does begin with the smallest choices.

This Sunshine Tonic Juice is one of those simple ways to bring a little more nourishment into your day. Made with carrots, oranges, pineapple, fresh ginger and turmeric, it’s bright, refreshing and packed with naturally occurring vitamins, antioxidants and plant compounds. Add coconut water for a little extra hydration, and you have one beautiful glass of goodness. 🥕🍊🌿

One thing I will always remind you of: wash your produce thoroughly, even when buying organic. Taking a few extra moments to properly prepare the foods we bring into our kitchens is part of caring for ourselves and the people we nourish.

And that really is the bigger message behind recipes like this.

Living intentionally doesn’t have to mean changing everything overnight. It can look like drinking more water. Adding more whole foods. Making something from scratch. Washing your produce. Growing an herb. Preparing a fresh juice instead of reaching for something packaged.

Little steps make a big impact.

It’s not about perfection. It’s about becoming more aware of the choices we make every day and choosing, when we can, to nourish ourselves with intention. 🤎
