I am ecstatic to announce that and will be having our soft open for our new restaurant on Thursday, February 8th, 2024 at 604 South Street. Named 紫蘇 Shiso, which translates to purple perilla, is an Asian minty herb that is wildly popular in Japanese, Chinese, Korean, Thai and other Asian cuisine. Incidentally, the kanji purple, 紫 is also my favorite color, and 蘇 is my favorite herb and also my surname.

It has been our dream to open an state of the art open kitchen restaurant serving the two dish we recklessly love and can’t live without: noodles and sushi.

Our goal is to focus heavily on freshness and quality as we make craft noodles and sushi for our guests. That also means we will be making everything from scratch in house. This includes soups, tare (sauces), toppings, and last but not least, fresh in house crafted noodles.

Story day: in late 2011 my family and I traveled to Los Angeles and had Santouka’s ramen at Mitsuwa in Torrance. The bowl just blew us away and we thought- we have to bring ramen to Philly! When I returned from that trip, I gave 2 weeks notice to my cushy manager position at a Main Line restaurant, rented a room in North Jersey for a few months and began my apprenticeship learning how to make ramen, earned minimum wage, and saw my family only 2 days a week. When I returned to Philly for those 2 days I was out searching for a storefront. Stumbled upon 18th Street after only hearing rumors the current owner wanted out. Walked in and asked them to sell to me (even though I had no money) and striked a deal. In a few months we were in debt for 6 figures and opened for business…. 1st Ramen shop in Philly.

Our manager of 8 years decided to spend more time with his wife & grandchildren as he has reached retirement age (he looks so young!) We are all sad to lose such a great asset however so glad he can retire now! We were so lucky to have him a part of our team.
