This is a special sampler cheesecake I made for my girls’ weekend celebrating our birthdays. This is 4 slices each of Brownie Bottom Peanut Butter Cup, Piña Colada, Chocolate Raspberry, and Peach. I don’t make samplers very often because it requires making four whole cheesecakes — the extra cheesecakes went to neighbors and my husband’s office.
The Peanut Butter Cup begins with a brownie crust, pieces of chopped peanut butter cups sandwiched between two layers of sweet, salty, creamy peanut butter cheesecake, and then topped with rich chocolate ganache, more chopped peanut butter cups, peanut butter drizzle, and fresh whipped cream rosettes.
Piña Colada has a shortbread crust filled with rich and creamy coconut rum cheesecake topped with pineapple brown sugar compote, toasted coconut flakes, fresh whipped cream rosettes and fun paper umbrellas threaded with a fresh pineapple chunk and a maraschino cherry.
A crispy chocolate torte crust forms the foundation of the Chocolate Raspberry Cheesecake. Decadent and silky chocolate cheesecake is layered with fresh raspberry reduction, topped with chocolate ganache, fresh raspberries, dark chocolate shavings (because I ran out of time to make chocolate curls), and fresh whipped cream border.
My Peach Cheesecake starts with shortbread cookies for the base, followed by layers of my signature vanilla cheesecake batter. There’s a layer of white peaches cooked with brown sugar and a hint of cinnamon both in the middle of the cheesecake and on top, and don’t forget the whipped cream!
