I am not Italian. I am not Italian-American.

I am simply a self-taught pizzaiolo who fell in love with Pizza Napoletana. I believed Pensacola deserved this level of craftsmanship, so I dedicated myself to bringing it here.

In less than one year of opening , we were honored to be recognized by USA.

Ever since the Pensacola News Journal article, I have had a lot of new faces discovering us, and with that, some confusion.

Let me be clear: Lucky Dough Pizza is all about real, naturally leavened dough, top-tier imported ingredients, and true craftsmanship.

We are not chasing the cheapest or biggest pizza—we are crafting something special. For those who value that, we are excited to share it with you!

I was born and raised in Pensacola.

My parents came to America from India in 1982 with nothing—no credit, no established resources, and no safety net. Within a year of arriving in the United States, they pooled together loans from their tight-knit Indian community and purchased this motel in 1983.

Back then, your family's name and reputation were your line of credit. Everything was built on trust.

My brother was born that same year, and I followed two years later.

I grew up watching my mom run the motel, do laundry, clean rooms, rent rooms overnight, cook traditional Gujarati meals, and raise our family, while my dad worked other jobs to gain experience before eventually running our family's gas station, "Lucky Penny".

We started in private school. How did they do it all!?

Through years of relentless hard work.

They went from having nothing to owning multiple properties throughout Pensacola.

Now, as I build Lucky Dough Pizza, I carry that legacy with me every day. The hard work I witnessed is the hard work I live.

I work this hard because I believe Pensacola needs this. Pensacola deserves this. We need more restaurants that mean something, stand for something, and become staples in our community for generations to come.

In my family, failure was never an option. You stay committed. You keep going. You build something worth leaving behind.

Today is my mother's birthday. The little boy who watched her run this motel now understands what all of those sacrifices meant. Everything I am building today is possible because of the example you and Dad set.

Adapted from "The Pizza Bible", our pesto is made with organic basil, raw organic Italian pine nuts, all-natural Parmesan, organic Coratina EVOO, fresh organic garlic, Sicilian sea salt, fresh organic lemon juice, freshly ground organic black pepper, and a touch of organic agave syrup.

Nic has been my rock since our pop-up days. He was there every day as we built this brick-and-mortar together and now we are a USA pizzeria.

He recently told me, “Not many people can say they work at one of the best pizzerias in the country".

Nic, I am just as proud to have you on this journey. You are my dawg, Nic! You are kind, generous, extremely intelligent, and you have always understood what we are building on a deeper level. I could not have done this without you. Thank you for understanding me! Thank you for being you!
