Pour over method slows things down… but it also shows everything about your coffee.
If your roast’s off, you’ll taste it.
If your grind’s off, you’ll taste it.
If your water’s off, you’ll taste that too.
When it’s right though… that black coffee is it’s clean, the flavor and aroma is clear, and you can actually pick up what makes that specific coffee unique.
When we roast each week we start with fresh coffee.
Grind it to a medium course texture right before brewing.
Give it a quick bloom… then steady pours, nothing rushed.
You don’t need much. Just a little attention.
Do it right, with quality coffee and the cup speaks for itself.

What makes our Mexican Decaf so… worth paying attention to?
It starts with the coffee.
High-quality beans from Chiapas, Mexico… grown with the kind of care you can taste, even before we touch it.
Then it’s water processed, so you’re not losing the character of the coffee just to take the caffeine out.
From there, we roast it like everything else we do… watching it closely, tasting it, making sure it holds up in the cup.
No shortcuts just because it’s decaf.
If you drink it black, you’ll see what we mean.
Clean, balanced, and still full of flavor.
Most folks expect less from decaf.
This one usually changes their mind.

We work with single origins so we can track every lot, then roast to bring out what’s already there. No covering it up. No roasting until all uniqueness is gone.
Never bitter. Always flavorful.
Roasted here at 7,126 feet. Each batch tasted before it leaves. Built to stand on its own, but pretty yummy with cream or milk 🙂
