We’re back! 🖤

We spent August slowing down, resting, and soaking up a little extra time together. It was exactly the pause we needed, and we’re coming back feeling refreshed, excited, and so ready to see you again.

🍂 September is here, and while everyone is already jumping into pumpkin season (don’t worry, we will soon 😉), we’re embracing the beautiful in between. A little bright, a little warm, and just beginning to feel like fall.

🍊 September Bun: Spiced Citrus Sugar Bun 🍊
Five spiced citrus dough swirled with cinnamon orange marmalade & sweet brown sugar, lathered in reduced orange juice simple syrup and finished with crunchy turbinado sugar. The perfect bun to transition us into fall.

For our first two markets back, we’ll also have:

🍐 Cinnamon Pear Mazarin 🍐
The classic Swedish Mazarin tart made better; citrus shortbread, nutty marzipan, spiced pear jam & crushed house made cinnamon sugar candied almonds.

🍎 Harvest Cookie 🍎
A soft molasses oatmeal cookie packed with apples, gooey white chocolate, crunchy pretzels & roasted pumpkin seeds, spiced to perfection (of course).

Time has passed by so quickly!

Our return has finally arrived this Saturday at Winter Park Farmers’ Market and next Monday at Audubon Park Community Market. More details (including our September menu) to come in the next couple days 🖤 we hope to see you there!

HAPPY BIRTHDAY!! 🎂🎉 🥳

Help us celebrate the owner, baker, photographer, editor, social media guru, heart and face (the list could go on and on) of Scandi Bakery. Today is Sara’s birthday and she deserves all the love and then some. From countless hours baking in the kitchen to spending mornings and nights coming up with new flavors and ideas. Scandi would not be what it is and what we’ve all come to love and enjoy in Orlando without her. She absolutely adores the community that shows up each week to support our little bakery. You’re all making her dreams come true. So today show her a little extra love and wish her a Happy Birthday and thank you for all of your incredible love and support!

Well… this wasn’t an easy post to write.

After a lot of conversations, we’ve decided to take the month of August off from markets.

To say the last few months have been incredible is an understatement. Every market has blown us away, and watching you all line up for Swedish buns is something we’ll never take for granted. But behind the scenes, we’ve been learning a hard lesson; it’s surprisingly easy to push your body beyond its limits when you’re doing something you love.

You wake up the morning after a long day in the kitchen and you tell yourself, “Just keep going.” Convincing yourself you’ve had enough rest (even if it was only a couple hours) and that you can manage to bake just a little bit longer. Until finally, your body not so kindly slams you into a brick wall and reminds you that you’re actually just a human (not a machine) who needs food, real sleep, and the occasional day off.

This level of support has been a blessing we’ve been hoping and praying for for a very long time, but now that it’s here, it’s shown us that we need a better system; one that lets us bake enough for more of you without running ourselves into the ground.

Thank you for cheering us on, waiting in line, sharing us with your friends, and making this little Swedish bakery feel so loved. Your support has meant more than you’ll ever know and we hope you stick around for our return 🖤

P.S. that first picture was taken at Winter Park Farmers’ Market at 8:45am…(45 minutes after the market started and after refilling the bins 3 times), and the second picture was taken at 8:52am. You guys are incredible.

The day has come for us to say farewell to our Peach Cobbler Bun 😢 we will be bringing some extras of these tonight to give them a proper send off 🖤 we will see you at Audubon Park Community Market!

We’re back at the Winter Park Farmers’ Market tomorrow 🇸🇪✨

We’ll have a full lineup of our Swedish buns, and this time we’re bringing even more after selling out so quickly at the last market. If you’ve been hoping to snag your favorites, tomorrow’s your chance!

We’ll be there bright and early until we sell out, so come by, say hi, and grab a fika with us. We can’t wait to see familiar faces and meet some new ones 🖤

Saturday at Winter Park Farmers’ Market completely exceeded every expectation we had 🖤

To say we were nervous going into a new market would be an understatement. We had no idea what to expect, so we brought plenty of pastries and even had backup buns ready just in case…

We still sold out in exactly one hour, with four hours of the market still to go 🥹

Thank you to every single person who stopped by, whether you were a familiar face or found us for the first time. You made us feel so incredibly welcome, and we’re beyond grateful for the support.

We’ll be back on Saturday the 18th with even more buns, but if this weekend was any indication, you’ll definitely want to arrive early. We can’t wait to see you all again 🇸🇪

Update! 🚨

We will not be at Audubon Park Community Market today as we are taking some much needed time to recoup from the busy markets and celebrate my birthday a little early! We will be back at Audubon on the 13th and Winter Park Farmers’ Market on the 18th 🖤

We’re so excited to share that Scandi Bakery is joining the Winter Park Farmers’ Market beginning this Saturday, and you’ll be able to find us there every other Saturday! 🎉

If you’re new here, welcome! I’m the baker behind Scandi Bakery, bringing Swedish baking to Central Florida since 2023. From our soft, pull apart Brown Sugar Cardamom Buns to our rotating seasonal pastries, everything is handmade, baked from scratch, using my own recipes inspired by the tradition of Swedish fika.
