Soul Food Sunday Pop-Up – A Taste of Home, A Table of Love

Every now and then, I find myself missing Right on Time Soul Food—my first restaurant, my first love, my first taste of what it meant to truly serve people. And of all the memories, Sunday Service stands out the most. It was the heart of our week, the day that brought our community together over plates of warm, home-cooked soul food.

My team and I would stay up all night, cooking, baking, getting ready for the rush. By Sunday morning, before we even unlocked the doors, the parking lot would already be full. Our regulars—our Sunday Lunch Crew—would be waiting. Sometimes, we’d let them in early, the sound of a sermon filling the room as we finished preparing. The moment the sermon ended, we’d blast our favorite worship music—Maverick City, The Clark Sisters, Fred Hammond, Hillsong and whoever else. Customers would hum along between bites, some even standing up to sway to the music.

By evening, when the church crowd faded, a new wave of familiar faces arrived—my friends, my family, my people. We’d push tables together, bring our favorite drinks, turn on some slow jams, and lose ourselves in laughter and fellowship. Through the week, we’d tell anyone and everyone—friends, strangers, folks in the grocery store—“Come to Soul Food Sunday.” Because I’ve always believed in the power of the dinner table. It’s where the best bonds are formed, where the most cherished memories are made.

And I think it’s time to bring that back.

The Collard Green Stem Redemption👨🏾‍🍳

When I was first learning how to cook, my momma taught me how to make one of the most essential Southern staples—collard greens. Now, if you grew up in a household like mine, you know making greens wasn’t a quick process. It was a whole event.

I remember standing at the sink for what felt like forever, picking the stems off one by one—breaking the leaves down, rinsing them over and over. I didn’t question it, because that’s just how it was done. That’s what I was taught. And back then, you couldn’t tell me any different.

But as I got older and started cooking for myself, I had to ask… Why am I spending all this time picking off stems that I PAID for?

So, I made a decision: I’m keeping the stems.
Why?
1️⃣ Because they taste just fine.
2️⃣ Because they’re packed with nutrients.
3️⃣ Because, let’s be real—I do not have time to be standing at the sink for hours.

Now, if you still want to pick your stems, go right ahead. But before you toss them in the trash, let me put you on game…

Fried Collard Green Stems.
Yep, you heard me right. A little seasoning, a little crunch, and suddenly those stems you were about to throw away turn into something miraculous.

Here’s how to make them:
✨ Thinly slice the stems into strips.
✨ Beat an egg with a pinch of salt & pepper.
✨ Lightly season some all-purpose flour with Cajun seasoning.
✨ Dip the stems in the egg wash, then toss them in the flour.
✨ Drop them in 350°F oil and fry for 2-3 minutes or until golden brown.

And just like that—you’ve got a crispy, flavorful snack that’ll make you think twice before throwing away those stems.

A Bowl of Warmth & a Trip Down Memory Lane

Today, as the cold settles in and the wind howls outside, I found myself reminiscing. It’s funny how adulthood sneaks up on you. One day, you’re a kid, waking up to the news that school is canceled, and suddenly, the world feels like it’s yours to explore.

I remember those snow days like they were yesterday. The moment we knew the roads were too bad for school, the group chat would light up. We’d rush to my grandpa’s shop, gathering firewood, making a quick stop at 7-Eleven for fire starters, then heading to Crest for marshmallows and all our favorite snacks. Back home, the day was filled with Monopoly battles, dance-offs, snowball fights, and hours on the game—pure, uninterrupted joy.

Back then, we weren’t thinking about bills, schedules, or responsibilities. We were just living. Freely. Fully. And now, as adults, we realize how rare those moments can be. Some of us are thriving in this grown-up world, while others are still figuring it out, trying to find that sweet spot between duty and delight. But no matter where you are in life, I think it’s important to check in with the younger version of yourself. The one who didn’t overthink, who found magic in the simplest things.

So maybe, instead of just watching the snow from your window, step outside. Have a sleepover. Build a snowman before it melts. Let yourself be a kid again, even if just for a little while.

The other night, I had the pleasure of curating an intimate five-course dining experience filled with love, intention, and unforgettable flavors:

🦀 Crab Cakes with Cajun cream sauce + lemon-parmesan arugula salad

Red beans and rice will always be one of my favorite comfort foods. Growing up in Oklahoma City, it was a dish filled with tradition, soul, and rich flavors. Last month, I decided to take it to the next level.

I combined fluffy rice with slow-cooked red beans and andouille sausage, stuffed the mix with mozzarella cheese, and deep-fried it for a crispy twist on a classic. Think of it as red beans and rice meets Italian arancini — a fusion inspired by my time at Vignola’s Italian Kitchen in Edmond, OK, where I fell in love with those crispy rice balls filled with cheese.

Food is about honoring the past while adding a new layer of creativity. This dish is my way of blending Southern soul and Italian flair into a bite that’s crispy, cheesy, and full of flavor.
