I've been getting some cookie orders recently and there's been a little confusion about my regular sized cookies versus my large cookies. So, I thought I'd share a quick look of my chocolate chip cookie sizes to compare them. π
My regular size cookies are 2 oz and up to 4" in diameter each. My large size cookies are 3.5 oz (or more) and up to 4" in diameter each. Both offer the same great flavor, just a slightly different bite. My regular cookies will have a more chewy bite to them and my larger cookies will be more cake-like, very similar to my chocolate chip cookie cake slices. π
My regular cookies begin at a 12 pk for $20 and my large cookies begin at a 12 pk for $35. They'll come packaged with parchment paper to separate layers or individually wrapped (additional charge) depending on your personal preference. π«Ά

I was recently contacted by a bride to be about making her wedding cake! π€©
This would be an incredible opportunity for me to enter into a previously unexplored area of business. This bride to be wants a tiered cake with a naked finish and I'm thrilled to have the opportunity to try my hand at some new to me techniques as I prepare the quote for her big day. π
I never want to over promise something I'm not able to deliver on and while this seemed simple enough, it was actually quite stressful to put into practice. However, I want to go above and beyond for you. So, if it's within my capabilities, I'm going to explore it. I'm going to attempt to master it. And, I'm going to be honest if I'm unable to attain it. Fortunately, this was something I was able to do and I'll be able to replicate it, even if it takes a few years off of me. π

I completed a late night of baking by finishing all three batches around 4 am yesterday. π΄
Did I mention that I can be a little single minded when I'm on a mission? π
I packaged them up and brought them to a party last night. I then placed a few of each on a platter and waited. All of the ladies knew that they had different extracts, but with them all placed together, they didn't know which cookies were which. π€
Surprisingly, they couldn't taste any specific variety. When given the cookies with the extracts labeled, they could only tell that the bourbon extract ones were slightly different in taste because the smell was slightly different, but couldn't tell me what the difference in taste was. π€
I tasted them and couldn't distinguish much of a taste difference overall either. I could tell the bourbon extract ones tasted slightly different, but like the other review, couldn't tell you what it was that was different. πΆ
One thing I did discover overall... The flavor is much more muted with the extract. While the shortbreads are still tasty, they're not as flavorful as when I use vanilla bean paste. So, I'm definitely on the right track with making vanilla bean paste rather than just straight extract. π
Fun fact, did you know that about 25% of the population are super tasters? It just so happens that I'm one of the 25%. π€
Here's the first batch! It's going in the oven and I'll begin the second batch. π€©
What do you think? Will anyone be able to taste the difference? Would they if they didn't know there were different extracts? π€
Here it is! The finishing touches! π€©
Do you know what kind of cookies they are now? π§
This was the best way I could think of to sample the different extracts for flavor. π€
If you've been following along, this is the biggest clue yet! π€©
Have you figured out what it is yet? This is most definitely a favorite of mine. π
In this next short clip, I've begun mixing the dry ingredients into the wet until it is all fully incorporated. Then it's set aside to "steep." π€©
Have you begun to put it together yet? π§
I felt this was the best way to explore these extracts and to compare apples to apples. π€
