Another weekly update: our floors are in and drywall is up for the first floor!

This week was where the shop visually went from “construction site” to “coffee shop.” The floors getting done means instillation of major pieces can start happening in the next few days and weeks.

All of our chairs and tables were delivered this week as well.

Maybe most important: our team has a tentative date circled on our calendars for a potential Grand Opening. We are not ready to share it quite yet as construction and installation can always change things, but the team is now working backwards with a concrete date in mind.

Longer post about our handmade mugs for drip and espresso based drinks coming soon. However, we wanted to show this fun calibration with Created Co. using their great double-walled Cove glass.

"This is the best coffee I've ever had."

This quote comes from our very own Randall Buchanan, Co-Owner and Head Roaster at Provis Coffee. Given that Randall has 12+ years in the specialty coffee industry and does not often exaggerate, we knew this coffee was special.

Beyond Randall's personal opinion of the coffee, you can see it is a special coffee for us in that it is our first ever competition grade coffee. From one of our favorite producers, Edwin Noreña with Edwin Noreña, this gesha coffee scored a 90 overall and the quality of this coffee is simply hard to describe.

The bio thermoshock process is a unique one which sees the coffee move from extreme cold to hot temperatures rather quickly to capture pronounced aroma and taste. Doing this to an already prized gesha varietal like this one has made for such a fun cup. Edwin's craftsmanship shows up in the taste: honeyed, floral, bright with kiwi and jasmine, and a finish that lingers like lemongrass steeped in tea.

It seems that a few of you have already found it on our site as we've already sold a few bags. Like the last Reserve Series, we bought a very limited amount of this micro-lot so if you want to try a coffee of this caliber, be sure to pick it up quick.

This week’s update is for your butt.

Before we were coffee shop owners, we were coffee shop users. So, we know the pain (literally) of trying to post up at a coffee shop for a few hours of work using an unpadded seat. It may seem small, but one of the ways we wanted to show one of our four values—hospitality—is to make sure all our seats were padded. No metal chairs or straight wood chairs.

By my count, we have six different kinds of chairs: high-back bar chairs, banquet booth seats, normal chairs, conference room / cupping lab chairs, non-backed bar stools, and a more decorative chair. All but the last have a good sized cushion that should keep you going throughout your work day.

Our hope is that hospitality in the small things matters!

- NEW COFFEE ALERT -

We are pumped to release this watermelon lemonade co-ferment. Few coffees “pop” quite like this one. A very strong taste of summer as the watermelon candy note is heavy on the front end with a cool lemonade acidity on the back end.

Something our team kept saying when we were considering bringing this coffee in: “This is the kind of coffee you want to tell your friends about.”

As you may have noticed by now, we love Edwin Noreña and what he is producing. This is our third coffee from him and the other two sold out faster than we could have guessed. Our assumption is that this one will be no different. We have enough coffee for roughly 50 bags total so get yours ASAP before they are gone.

We seriously love hosting cuppings.

Cupping is a major part of learning coffee and it has been a blast to host many potential wholesale cuppings since we’ve launched. We’ve been blown away by the many restaurants, cafes, boutiques, bakeries, and more that have reached out to inquire about a wholesale partnership. We are very much in the stage of signing wholesale clients right now and even have some unique partnership opportunities. Today, we got to cup with Marigold’s KC—a new restaurant coming to 39th street. After talking with them about their menu we are *pumped* for them to open. Be sure to give them a follow.

Another update, Tuesday edition.

We have officially past the many city inspections needed to start getting drywall up! After this week, things will begin moving *really* fast. Expect these weekly updates to start looking quite different week over week as we get closer to announcing the Grand Opening.

We also got some framing started on the upstairs of the cafe. It’s not something we have talked about much but Provis will be a two story cafe with *tons* of seating both upstairs and downstairs.

If you see the last image here, you’ll also see some tetras mastery as we fit 700+ books in the bed of a truck. More on the books for a later post!
