As many of you know, we have a "Reserve Series" of some of our more premier coffees.

However, if you are looking for a top-notch coffee without the price of the Reserve Series, let us suggest the La Roca.

This coffee has a strong watermelon flavor on the front end and a consistently smooth finish. It is an anaerobic natural process which comes through for a fun cup each time.

Weekly update till opening number four:

This week our team spent many hours in front of architect drawings, contractor renderings, and design plans. This is the part of building phase when many decisions are being made in real time.

In the physical space, there was progress this week as all HVAC went in and electrical was finished up. These days do not feel overly “cool” but these decisions are important to us on a hospitality front. Making sure our guest have access to outlets and the shop is a comfortable temperature are vital aspects to us making good on “hospitality” being one of our core values.

Outside of the physical shop we also made progress. Maybe the biggest news on the coffee front is we are making strides in developing great wholesale relations. We saw over 100 of our bags sold in various shops around the city and subscription services this week. We are grateful for the coffee community of KC already showing support.

So it was a joy to stop by today for “Miss Jojo’s” soft-opening of her new bakery. I got to hear a bit of Miss Jojo’s story and her passion for baking was infectious. Originally from the island of Mauritius, Joelle has been in the US for eight years and she told us it was her dream since she was a teenager to own her own bakery. Well, her dream came true today and her baked goods are beyond delicious.

I’m currently finishing her triple chocolate scone as I type this and I’m dreading having to wait for another one.

We are honored that Miss Jojo chose Provis as her coffee provider. You can get our Hound and Crown blend on drip at her bakery and she also has single origin retail bags for sale.

Weekly update till opening number three.

In the physical shop, the concrete has dried completely and we are on to the next stage. But, something we wanted to point out for you: you see all those short poles sticking out of the concrete? Given that we are coffee lovers and have spent hours upon hours in coffee shops working, we know the pain of not having an outlet nearby. So, at Provis, we are trying to make sure that every chair is somewhat close to an outlet. All those short poles will allow us to do that! Work away, friends!

Outside of the physical shop, we have been pressing in to wholesale and have signed a few more wholesale partners—more on that later.

Weekly update till opening #2:

This week the team was quite busy. In the physical cafe, all plumbing and electric was complete as well as the concrete was poured. Fun to see the bones of the cafe come together.

From a roasting perspective, this last week our team fulfilled hundreds of ordered from our First Taste Club campaign. We roasted, dosed, bagged, sealed, and shipped more coffee than we could have dreamed for our first week. It created an all-hands-deck situation for our team but it ended up being a sweet time of seeing a dream become a reality.

Keep watching for these weekly Monday morning updates as the physical cafe gets closer to completion. We appreciate you all a ton!

We just sold the last bag of this Honey Gesha coffee produced by Juliana Guevara. While we will not have this coffee again from her, she is too good to not bring back in--we will have our eye out for more of her coffee and you should too! We are beginning to hear from a number of costumers that bags are beginning to arrive today! It is a sweet and surreal feeling to know that Provis Coffee is finally in the wild.

Turns out you all *really* love the peach co-ferment. No surprise since the peach ring notes are so refreshing and sweet. We sold out of our entire stock in just a few days but have no fear, we ordered more and have already begun roasting the next batch.

If you’re unfamiliar with farms and Edwin Noreña, he is a producer we so appreciate and currently have two of his offerings available—the one and a green apple co-ferment that taste like a green jolly rancher or green apple caramel sucker.

Glad importers like .coffee.inc were able to get us more so quick for the amount of peach orders that came in.
