Directions⬇️⬇️
“I used a Keto Yellow Cake Mix from Keto Queen Kreations to create this dessert. Follow directions on package to assemble batter. Separate batter into bowls and use food dye to create spring colors! Scoop 1 tsp at a time (alternating colors) into a wrapper lined cupcake pan. Bake according to mix instructions
Frosting:
3 Tbsp water
1/2 cup + 2 Tbsp monkfruit sweetener
3 egg whites
1 1/2 sticks butter, softened
1/2 tsp vanilla extract
▪▪▪
• Combine water and sweetener in a saucepan over low. Heat until sweetener is dissolved and liquid is boiling clear
• While mixture is heating, use an electric mixer to whip egg whites on high until stiff peaks form. Slowly pour liquid from saucepan into egg whites and whip on high for 5 minutes, or until room temperature is reached
• Add vanilla and butter ~ 1 Tbsp at a time. Mixture will look curdled, but don't panic! Continue to mix until frosting turns smooth
• Scoop into a piping bag with a large round tip and frost cupcakes
👉 I used melted white chips with orange food coloring to make the beak and feet. The eyes were made from melted dark chocolate. Simply put melted chocolate in a piping bag with a small decorating tip and draw shapes on to parchment paper. Let cool in fridge
