Cheesy Broccoli Chicken Fettuccine Alfredo
Ingredients:
1 lb boneless, skinless chicken breasts, sliced into thick strips
12 oz fettuccine
3 cups fresh broccoli florets
2 tbsp olive oil
3 tbsp unsalted butter, divided
5 garlic cloves, minced
1 tsp Italian seasoning
1 tsp smoked paprika
1/2 tsp onion powder
3/4 tsp salt
1/2 tsp black pepper
1 1/2 cups heavy cream
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
3/4 cup freshly grated Parmesan cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup reserved pasta water
2 tbsp chopped fresh parsley
Directions:
Cook the fettuccine in salted boiling water until al dente. Add the broccoli during the final 3 minutes of cooking. Reserve 1/3 cup of pasta water, then drain.
Season the chicken with Italian seasoning, smoked paprika, onion powder, salt, and black pepper.
Heat the olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook the chicken for 6 to 8 minutes, turning occasionally, until golden brown with deeply seared edges and a fully cooked center. Transfer it to a plate.
Reduce the heat to medium and melt the remaining butter in the same skillet. Add the garlic and cook for 30 seconds.
Pour in the heavy cream and stir in the cream cheese until completely smooth.
Add the mozzarella, Parmesan, and cheddar gradually, stirring until the cheeses melt into a thick, glossy Alfredo sauce.
Add the fettuccine and broccoli to the skillet. Toss gently until the pasta and broccoli are heavily coated, adding reserved pasta water only as needed.
Arrange the chicken beside or over the creamy fettuccine. Spoon extra cheese sauce over the pasta and finish with parsley and additional Parmesan.
