Classic Pound Cake
Ingredients (Makes 1 Loaf)
* 2 cups (250 g) all-purpose flour
* 1 tsp baking powder
* Œ tsp salt
* 1 cup (225 g) unsalted butter, softened
* 1œ cups (300 g) granulated sugar
* 4 large eggs
* 1 tsp vanilla extract
* œ cup (120 ml) whole milk
Method
1. Preheat the oven to 175°C (350°F) and grease a 9 à 5-inch loaf pan.
2. Whisk together the flour, baking powder, and salt.
3. Beat the butter and sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition.
5. Mix in the vanilla extract.
6. Alternate adding the dry ingredients and milk, beginning and ending with the flour mixture.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake for 55â65 minutes, or until a toothpick inserted in the center comes out clean.
9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Tips
* For a citrus version, add 1 tablespoon lemon or orange zest.
* Dust with powdered sugar or glaze after cooling.
Danish Pastry
Ingredients (Makes 12 Pastries)
Dough
* 3œ cups (440 g) bread flour
* 2Œ tsp (7 g) instant yeast
* Œ cup (50 g) granulated sugar
* 1 tsp salt
* Ÿ cup (180 ml) warm milk
* 1 large egg
* 2 tbsp (30 g) unsalted butter, softened
Butter Layer
* 1 cup (225 g) cold unsalted butter
Filling (Optional)
* Fruit jam, pastry cream, cream cheese, or Nutella
Egg Wash
* 1 egg beaten with 1 tbsp milk
Method
1. Mix the flour, yeast, sugar, and salt.
2. Add the milk, egg, and softened butter, then knead until smooth.
3. Refrigerate the dough for 1 hour.
4. Enclose the cold butter in the dough and perform 3 letter folds, chilling for 30 minutes between folds.
5. Roll the dough to about 5 mm (Œ inch) thick.
6. Cut and shape into your preferred Danish designs.
7. Add your desired filling.
8. Brush with egg wash and proof for 30â45 minutes.
9. Bake at 200°C (400°F) for 15â20 minutes until golden brown.
Tips
* Chill the dough whenever the butter becomes soft.
* Finish with a simple icing drizzle after baking.
