Last month, we had the pleasure of hosting Mariacristina and Isabella Oddero in the cellar for an intimate five-course wine dinner. Chef Alex served diver scallop, hand-rolled ravioli, and rack of lamb alongside library vintages back to 1970, a newly bottled Capalot, and Cappellano Chinato.

Thirty years ago, when il Buco morphed from antique store to restaurant, Alberto and Donna began their search for the best olive oil. This led us back to Alberto’s roots in Umbria, where the Pandolfi-Elmi family had been tending the same groves since the 1600s.

Hand-harvested in October, when the olives are still green creating an oil with a low acidity, high in polyphenols (antioxidants). No pesticides. No shortcuts. In 2000 we helped the Pandolfis build a mill on their estate, so the fruit could go directly from tree to press. 

Eventually our search for the finest ingredients led us to Sicily and the salt pans of Trapani where we met Alberto Galluffo, an expert in single-varietal oils.

Each oil displays the distinct character indigenous to its region.  These are the oils you’ve been tasting at il Buco for years. New to our pantry are flavored finishing oils, made the traditional Sicilian way by pressing fresh citrus, fennel, or peperoncino alongside the olives, allowing the flavors to become part of the oil itself.

Whether you’re new to our olive oils or a longtime fan, stop in at any of our restaurants for an olive oil tasting - find your varietal, learn its story, and take a bottle home. Available at the restaurants and online.

This Earth Day, we’re spotlighting our friends at GreenWave and their work supporting kelp and shellfish farms across the country. Bren Smith founded the GreenWave non-profit in 2013 with the mission to scale regenerative seaweeds and build a market for these vital environmental crops.

Last week, Donna and Danny visited Sue Wicks at her farm, Violet Cove Oysters, in Mastic Beach, NY. GreenWave subsidizes the production of her indigenous sugar kelp, which plays a critical role in restoring coastal ecosystems. As it grows, it absorbs excess nitrogen from the water, helping to reduce pollution, improve water quality, and rebalance marine environments. It also acts as a powerful carbon sink and supports biodiversity by creating habitat for marine life.

To help raise awareness this week, we’re featuring Sue’s sugar kelp across our menus.

On May 6th, we will have the pleasure of partnering with Mariacristina and Isabella Oddero for an intimate five-course wine dinner in our cellar. For one night only, they will be guiding us through an extraordinary lineup that includes library vintages back to 1970 and a rare 1.5L of the newly bottled Capalot cru.

Few estates in the wine world carry the weight of Oddero. Since 1878, the Oddero family has been farming the hills of La Morra in the heart of the Langhe, building one of Barolo’s most storied estates across seven generations.
