Quinoa and chicken Asopa'o!
And ... Voila !!! This is my Asopao version. This Dominican traditional dish I learned how to cook from my mom. She was a wonderful cook.
The traditional Asopao is a cross between a soup and paella, is an easy, hearty one-dish meal featuring juicy chicken thighs, rice, and assorted vegetables and natural herbs. My version is different though, I used quinoa instead of rice.
The final result is an incredibly hearty yet light stew. Full of flavor and nutrients.
