A spicy presentation to surprise your guests at any party

INGREDIENTS

16 ounces Cold smoked salmon (finely chopped)
2 tablespoons Fresh lemon juice (add more for garnish)
1 teaspoon Diced jalapeno (seeded and finely chopped)
2 bunches Scallions (finely chopped )
1⁄2 teaspoon Grated fresh ginger
2 tablespoons Fresh cilantro (finely chopped, add more for garnish)
1 teaspoon Toasted sesame seeds
2 tablespoons Canola oil
1 dash Coarse salt and freshly ground pepper (to taste)
1 teaspoon Toasted sesame oil

INSTRUCTIONS
In a bowl, combine salmon, lemon juice, jalapeno, scallion, ginger, cilantro, sesame seeds and sesame oil and canola oil. Mix gently to combine. Season with salt and pepper. Divide salmon among six plates. Garnish with lemon juice. Serve with potato chips Alternative preparation and presentation. In a small bowl, combine lemon juice, jalapeno, scallion, ginger, cilantro, sesame seeds and sesame oil and canola oil. Mix to combine. Season with salt and pepper. Place a ring mold in the center of a dish. Fill with chopped salmon.

Cold smoked salmon blended with an assortment of fresh herbs placed in a homemade
pastry crust.

INGREDIENTS
6 Medium yellow onions (about 2lbs, cut into 1/2 inch slices)
1⁄4 cup Olive Oil
2 cloves Whole garlic (peeled)
1 Bay leaf
1⁄2 teaspoon Fresh rosemary (finely chopped )
1⁄2 teaspoon Kosher salt
1 teaspoon Fresh thyme
1⁄8 teaspoon Freshly ground black pepper
4 ounces Cold smoked salmon (sliced into 1/2 strips- available under Acme, Blue Hill
Bay, and Ruby Bay labels)
10 Pitted small black olives (cut in half)
1 tablespoon Olive Oil
INSTRUCTIONS
Preheat the oven to 400˚F.
Heat 2-3 tablespoons of olive oil in a large skillet over medium heat. Add the onions, garlic cloves, bay leaf, rosemary sprigs and salt Cook, partially covered at first, stirring occasionally until the onions become translucent. Remove cover and continue cooking
until the onions are golden and creamy, about 40-45 minutes.
Remove garlic, bay leaf and discard. Stir in thyme and pepper. (Onions can be made a day ahead and refrigerated until ready to assemble the tart,) While the onions are
cooking, fill the tart pan with the prepared pastry. Line the pastry with parchment or foil and fill with pie weights or dried beans.
Bake for 15 minutes, remove weights and paper. Prick the bottom with a fork and return to over for 8-10 minutes until lightly golden. Remove and set aside Assemble the

Spread the onions into the pastry. Arrange the salmon and olives over the onions drizzle with 1 tablespoon olive oil and bake 10-15 minutes until bubbling and hot.

INGREDIENTS
5 cups Cubed baguette or ciabatta bread (cut into 1 inch cubes)
2 tablespoons Extra virgin olive oil
3⁄4 cups Small red onion (thinly sliced)
2 cups Tomatoes (chopped or halved cherry tomatoes)
2 cups 1 Medium cucumber (peeled and sliced into 1/2 moons)
1 Yellow bell pepper (cut into bite-sized pieces)
1 tablespoon Capers (drained)
1⁄4 cup Fresh basil (chopped)
12 ounces Cold smoked wild sockeye (cut into pieces)
Vinaigrette
1⁄2 teaspoon Dijon mustard
1⁄2 teaspoon Minced garlic
2 tablespoons Vinegar (white wine or moscatel)
1⁄4 cup Extra virgin olive oil
1 dash Ground black pepper (to taste)
1⁄4 teaspoon Kosher salt

INSTRUCTIONS
Preheat the broiler. Toss bread cubes with 1 tablespoon olive oil until evenly coated. Place bread on a baking sheet in a single layer. Broil 2 minutes until bread is toasted In a large bowl, combine tomatoes, cucumbers, bell pepper, capers, and basil. Add salmon, bread, and onions. Whisk together Dijon mustard, garlic vinegar, olive oil salt and pepper in a small bowl. Add to bread mixture and toss until evenly coated. Allow salad to sit for 30 minutes
for flavors to meld.

DESCRIPTION
This lean treat is the perfect healthy meal that's packed with Omega 3s and Protein.

INGREDIENTS
2 tablespoons oil (to saute)
1 medium yellow onion (sliced into thick rings)
4 eggs
2 large ripe avocados
4 slices sourdough bread (toasted)
1 Acme pastrami smoked salmon (4oz package)
INSTRUCTIONS
Heat 1 tablespoon of the oil on medium high heat in a large skillet. Add the thickly sliced onions to the pan and stir to coat in the oil then continue to cook, undisturbed for about 3-4 minutes, or until the onions begin to take on a lot of color. Stir once more and cook for another 3-4 or until the onions have softened but still retain some bite to them. Remove the onions from the pan and lower the heat to medium.
Add the remaining oil to the pan and gently crack the eggs into the pan, taking care not to break the yolks. Fry the eggs until the whites are cooked but the yolks are still runny.
While the eggs are cooking, halve the avocados, and using a fork, mash half of an avocado onto each piece of toasted sourdough. Divide the grilled onions amongst the 4 pieces of toast and scatter them on top of the avocado. Place 1 slice of the Acme Pastrami Lox (1oz) on top of the onions.
Top with the fried eggs and serve immediately.

This recipe is prepared with Acme's one of a kind Smoked Sable, also know as Alaskan Black Cod. Our Sable is topped with a paprika seasoning and mixed with a unique wasabi spice creating an appetizer that provides an
easy option for any time of the week.

INGREDIENTS
2 teaspoons Wasabi paste
Wasabi cream
3 tablespoons Water
1⁄4 cup Sour Cream
12 slices Smoked sable (Alaskan black cod)
2 Blood oranges or navel oranges (peeled, pit removed, cut into segments)
1 Lime (for lime juice)
1⁄2 cup Chopped fresh flat leaf parsley.
1⁄4 cup Extra virgin olive oil
3 tablespoons Olives (sliced pitted manzanilla olives, or small green olives)
1 dash Coarse sea salt
1 dash Fresh ground black pepper
1 Lime

INSTRUCTIONS
In a small bowl, combine wasabi paste and water, mixing to combine. Add sour cream, stirring until well incorporated, set aside. Fan three slices of smoked sable on each of four plates. Combine the orange, grapefruit, lime juice, parsley, and olives in a bowl and mix gently. Divide among plates, mounding in the center. Sprinkle with sea salt, and pepper. Drizzle with wasabi cream and garnish with lime juice. Serve immediately.

CHEESEBURGERS
WITH TRUFFLE MAYONNAISE

People: 4 people

difficulty: Easy
INGREDIENTS
600 g minced veal
30 ml truffle oil to
taste salt, pepper
4 hamburger buns
80 g black truffle pate la rustichella
4 slices of cheddar cheese
80 g mayonnaise
1 onion
1 glass of cognac
Method
-Put the meat in a bowl, salt, pepper and mix with the truffle oil and truffle powder
-make 4 circular hamburgers of about 160 degrees.
Julienne an onion and sate in a pan with a glass of cognac.
Cook the hamburger, and when desired add the slice of cheese.
At this point, cut the bread, spread the truffle pate on both sides, put the hamburger, the onion and the mayonnaise, close the sandwich and serve.
