Mmmm.....its been crazy with everything going on, but y'all ready for the comeback? We've been out of operation for a few months, unexpectedly, yet like the Crescent City after a hurricane we "bout" to show our resilience and bounce back. We are looking into what's needed (and legally accepted in these times) to host a NOLA style "block" party in July. Event details to be posted this week.
Here's some jambalaya to get you thinking. As always, "Lassiez les bon Temps rouler". See ya 'cher!

Just a super short video for you as I edit this week's video. Not a southern dish; but, if you enjoy international dishes this is Egusi stew. It is a Nigerian dish. Any accompaniment (rice, cous cous, etc.) can be served with it. I made a traditional fufu to go with mine.

In this video we will be making smothered porkchops, grits, praline bacon, and a lil lagniappe. Let's do this.

Makin groceries:
In New Orleans we 'make' groceries. This is because of a translation error from Frecnh to English. The French phrase "faire son marché," means to do one's grocery shopping. "Faire" means both "to do" and "to make,". In translation the latter of the two was used. We've been making groceries ever since.

What's going on Krewe Members!!
So, we're gonna need about 6-10 people weekly to have a "first taste". The food I cook on the show needs to go somewhere or to someone. I don't know how to cook for less than an army and my fridge and freezers are looking a little overweight. I also really hate wasting food. At a point in the not so far away but not so near future we'll have a Patreon page set up as a crowd funding source toward starting our food truck and catering services. "First Taste" is going to be one of the perks offered at mid and higher level tiers (this is only a small perk of our 2nd and 3rd tiers. There's so much more you'll want to sign up for). Slide in now as a taster and keep that perk for the first 3 months if you become a patron, even if the tier you sign up for doesn't allow it or if you're making a single donation.

Have any questions shoot us a message.

As always, Laissez les bon temps rouler!

S.1 E.1 - Banana Pudding

Pan Fried Bananas

Ingredients:
^Approx. 6 bananas (no mushy stuff)
^Butter or non-stick cooking spray (we just love butter in the south)
^Roughly 3 TBS of cinnamon sugar (you may also use an alternative sweetener like honey. Do what your taste buds tell ya')

**1) Slice bananas into approx. 1/2" to 1" slices (thickness is a personal choice, but not too thin they'll be soggy and not usable for your banana pudding)** UPDATE

2) Heat pan and melt butter (if using cooking spray, spray the bottom of you pan

3) Lay one slice in the pan, if it sizzles add the rest of your bananas in a single into the pan. If you DONT hear a sizzle either you haven't let it heat all the way or you need to turn up the heat a little bit.

4) Once your single layer of bananas are in the pan brown them on both sides (3-4 minutes each side)

5) Sprinkle some of your cinnamon sugar on the top (don't do this step if you are using honey or another liquid sweetner)

6) Flip bananas and sprinkle cinnamon sugar on top

7) Once the other side is browned, remove bananas from the pan and let drain on a paper towel.

8) Pat top of bananas to make sure all leftover butter in removed from the bananas.

9) Use on banana pudding or your favorite banana dish/dessert

We are editing videos for these dishes and a couple others. Stay tuned to learn how to make these and more.
