Goodbye for now…

First off, we would like to thank you for letting us serve you. It has been an honor and the support from our family and friends has been humbling.

Unfortunately, we will have to say goodbye soon. As we were working through some remodeling and permits, there were some unexpected circumstances we will have to take some time to sort through. Our hope and prayer is that we will be back. Until then, we hope that we have enriched your lives in some way. You have enriched ours, that’s for sure. Thank you again.

Tasting coffee blind is one of the most rewarding and frustrating things I do.

It’s rewarding because it allows me to remove any bias that I might have towards a particular coffee or roast profile and see the coffee for what it truly is.

It can be frustrating because of the potential descent down the rabbit hole of perfection.

However, it does help me learn and improve and that is why I continue to do it.

I recently picked up a new addition to the coffee lab. A Timemore Coffee hand grinder. I have to say, I am pleasantly surprised. This is definitely a welcome tool in my arsenal. The grind quality is better than that of my Baratza Encore and it’s also faster. Trust me, I tested it out. The Baratza ground 25 grams in 45 seconds while the Timemore ground the same amount in 25 seconds. I also recently took it on a trip and loved it. For those of you who are looking to up your coffee game, don’t count out a high quality hand grinder. It’s also way more quiet than your average home burr grinder. That’s a tip for you parents out there looking to keep those kids in bed for just five more minutes. 😉

One lesson that I have learned over the past 10 years of the specialty coffee rabbit hole is that grind quality is one of the most important variables in making an awesome cup of coffee at home. This picture is an example of the grind sizes that I use for different brew methods. While these grind sizes get me in the right ball park, I do adjust them from coffee to coffee depending on the roast level, processing method, and even the water that I’m using.

Also notice the consistency of the grinds. It is important that your grinds are not full of large chunks (often referred to as boulders in the coffee industry) and fine dusty stuff (or fines) at the same time. This spread in grind size is the equivalent of trying to roast potatoes that are of a significant size difference. Some would be burnt and some would be undercooked. A similar phenomenon happens to your coffee too. The fines add a lot of bitterness and the boulders add unpleasant sour flavors. This leads to an unbalanced brew. Evenness in grind will allow all of the grounds to extract evenly and give you the cup that you’re looking for. Don’t have a grinder capable of giving you a even grind? Not to fret. We recommend ordering pre-ground from us. You’ll be pleasantly surprised by the result. As long as you order a small enough amount that you will finish is in 4-5 days, it will maintain most of its character before oxidation sets in.

Did you know that coffee is actually a seed and not a bean and that it comes from fruit? That’s why you can usually pick up some fruity notes in lighter roasted coffee.

We recently had the opportunity to try a ripe coffee cherry. It was really interesting! The outer skin was tougher than expected and there wasn’t much pulp, but what was there was very sweet and somewhat slimy. It had a general fruit flavor, but nothing specific.
