One lesson that I have learned over the past 10 years of the specialty coffee rabbit hole is that grind quality is one of the most important variables in making an awesome cup of coffee at home. This picture is an example of the grind sizes that I use for different brew methods. While these grind sizes get me in the right ball park, I do adjust them from coffee to coffee depending on the roast level, processing method, and even the water that I’m using.
Also notice the consistency of the grinds. It is important that your grinds are not full of large chunks (often referred to as boulders in the coffee industry) and fine dusty stuff (or fines) at the same time. This spread in grind size is the equivalent of trying to roast potatoes that are of a significant size difference. Some would be burnt and some would be undercooked. A similar phenomenon happens to your coffee too. The fines add a lot of bitterness and the boulders add unpleasant sour flavors. This leads to an unbalanced brew. Evenness in grind will allow all of the grounds to extract evenly and give you the cup that you’re looking for. Don’t have a grinder capable of giving you a even grind? Not to fret. We recommend ordering pre-ground from us. You’ll be pleasantly surprised by the result. As long as you order a small enough amount that you will finish is in 4-5 days, it will maintain most of its character before oxidation sets in.
