Our wood-fired ovens run at 800 degrees-the perfect temperature for Neapolitan pizza.The high heat paired with our naturally leavened dough produce an amazing light,airy,crispy,crust full of flavor.

Cornicionne- the outer edge of the crust. Ours is the result of constant attention to our mother sourdough starter and adjusting the recipe according to seasonality and current weather.

A little more or less mixing. A little warmer or cooler water. A little more or less poolish in our recipe. Small adjustments in the hydration levels.

Bench rest then ball.

Cold fermentation for 3-5 days.

A final room room temperature proofing.

Only then is it ready to become your pizza. 🍕❤️
