Ten Years.

Ten years ago, we unlocked a door with equal parts courage and nerves, flipped an open sign for the very first time, and welcomed our very first guests.

We had sawdust in our hair, paint on our hands, and more pasta experiments than we could count. We had big dreams, a boatload of worry, and one simple hope: that you would walk through the door.

And you did.

You showed up. You brought your friends. You celebrated birthdays and anniversaries with us. You trusted us with weeknight dinners and milestone moments. You filled our dining room with laughter, conversation, and life.

What started as an idea built on long nights and handmade pasta has grown into something far bigger than we ever imagined: a community.

Over the last decade, there have been challenges, lessons, growth, loss, redemption, and countless plates of pasta and sauce. Through it all, one thing has never changed: our determination to keep getting better and our gratitude for the privilege of serving you.

Ten years in, and we’re more inspired than ever.

Thank you for believing in us.

Thank you for inviting us to your table.

Most commercial pasta is dried fast at high heat, which damages sensitive amino acids like lysine and creates furosine — a marker of over-processed protein.

We do it differently.
Our bronze-cut pasta is dried slowly at 46°C or below for 48 hours, preserving protein quality, supporting easier digestion, and maintaining a clean wheat profile. The bronze cut creates a naturally rough surface that holds sauce — so you need less, not more.

Probably our most requested dish returns for it’s winter stay. Our delicious, fork-tender Red Wine Braised beef features slow braised beef in a velvety smooth red wine reduction. Served over your choice of our heartiest cuts of fresh pasta: Gnocchi or Pappardelle. We finish this off with hand grated aged pecorino romano and chives.
