The mustard pods picked from the hedgerow at Balsam Farms, LLC. last fall. The ramps foraged in the Catskills this spring. Marilee’s potatoes became the chips. Snake River Farms supplied the Wagyu. A few months and a few hundred miles later, they’re all here on the table at Mavericks Montauk. Our steak tartare, a dish time has duly rewarded.
