Super simple breakfast!

Air fried potatoes, morning star veggie bacon and a veggie omelet with pepper jack cheese.

Veggie bacon is baked.

Omelet has
red and yellow bell peppers chopped
Onions chopped
Tomatoes diced
Spinach
Avocado
1 tbsp olive oil
Pepper jack cheese
As many eggs as you’d like (beaten)

I put the onions and peppers in a skillet with 1 tbsp. When they’re almost done add in the spinach and tomatoes. Followed by the beaten eggs. Once the omelet had been flipped add the pepper jack cheese, allow it to melt then, fold omelet.

7:10 kid friendly. Potatoes and veggie bacon were eaten. My one son ate a side of tomatoes instead of his omelet so, that was a plus.

Ramen!

3 packages of ramen (toss the seasoning packet)
Green onions for topping
4 boiled eggs (cooked how you like)
4 cups vegetable broth
2 cups water
1/2 tbsp ginger
3 tbsp soy sauce (can use low sodium if you want)
2 portobello mushrooms (I sliced mine but, you can cut them how you want)
2 garlic cloves
5 Sweet peppers (can use jalapeños but, I made this for the boys as well so, I opted out).
1 carrot sliced
1 tbsp olive oil

In a talk sauce pan ( aka pot) add olive oil, carrots, mushrooms, garlic, and peppers. Sauté for about 5 minutes. Add water, soy sauce, ginger, vegetable broth and ramen noodles. When noodles have fully cooked, serve with green onions and eggs. ***optional to top with sesame seeds.

My family devoured this. 10:10 for the kid scale!

Enchiladas!

These were thrown together quickly (we had been working outside all day and I was way too tired for a huge meal).

1 can black beans
1 can enchilada sauce
1/2 onion chopped
1 cup fresh spinach
2 cups shredded mozzarella cheese
4 (big) flour tortillas
1/2 tablespoon butter

Drain black beans. In a skillet, melt the butter and add the drained beans and onions. Once the onions are soft enough for your spatula to cut through, drain the juice from the skillet (dump everything in a strainer). In the skillet, on low heat, add the spinach to the beans and onions stirring occasionally so that the beans don’t stick and burn.

Stuff tortillas using 1 cup of the mozzarella and the bean mixture. Roll tortillas into tight enchiladas, side by side in a baking dish. Add enchilada sauce to the top of the tortillas and let it fall into the baking dish. Top them off with the remaining cup of cheese. Broil (500 degrees) until the edges of the tortillas start to brown.

I paired this with some Spanish rice that cooks in the microwave for 90 seconds. Super easy meal with minimal clean up and it was delicious.

Boys wouldn’t eat the enchiladas but, they are the rice and some left overs from lunch so, 6:10 on the kid factor.

Breakfast was simple yesterday.

Avocado toast and hash brown casserole

Avocado toast
6 slices of bread
2 eggs boiled however you like them
1/2 lime (juiced)
Salt and pepper
Everything bagel seasoning to top off (optional)

Mash avocados with lime juice, salt, and pepper. Toast bread. Spread mashed avocados. Top with boiled eggs.

Hash brown casserole

4 cups shredded hash browns
1/2 cup cream of mushroom soup
2 cups cheddar cheese
1/2 cup sour cream
1/2 onion diced

Preheat oven 375 degrees. Mix all ingredients in a baking dish. Bake for 35 minutes.

Parmesan “chicken” over spaghetti.

Rating- 8:10

1 cauliflower head
1 bag mozzarella cheese
1/4 cup Parmesan cheese
2 cups flour
2 cups bread crumps
4 eggs
1 /2 jar spaghetti sauce
Handful of spinach
Vegetable oil to fry pieces.

Spaghetti

1 box spaghetti
1- 1.5 jars spaghetti sauce (I tend to like a lot of sauce).

Cut cauliflower into 1 inch sections. Mine completely fell apart BUT, there were three good, full, sections. (I still used the pieces that weren’t super small). Using three different bowls, add the flour to one, bread crumbs to another and whip the eggs into another (can add milk if you’d like).

Preheat oil in skillet. Once oil is hot dip the cauliflower into the egg, then bread crumbs, back to the egg and into the flower. (I tried a few without dipping the cauliflower into the egg the second time and they weren’t as crispy and brown as the rest so, completely up to you!)

once you have filled the skillet with the breaded ones, start the water for the pasta. Add salt to help boil.

Cook the cauliflower until brown (2-4 minutes per side depending on what your heat is set at). When they’re cooked set them aside on paper towels or a dish towel to absorb some of the oil.

**Cook pasta**

After you’ve cooked all of the cauliflower preheat your oven to a 500* broil. While waiting oil a sheet pan to add the cauliflower to (makes the cheese come off with it) Place the cauliflower on the sheet pan adding spinach, marinara, Parmesan cheese, and mozzarella (in that order). When done, broil cauliflower until brown enough for your liking. (The dark thing on top of mine in the picture is a sun dried tomato, which I probably could’ve left off because it did no good and I was too afraid to eat it 😂. )

By now, your pasta is or should be close to being finished. Once it’s cooked drain and toss back into the pot to mix in your sauce and heat on low until ready to serve.

Directions are long, but they’re super simple. Hope you enjoy!

Family rating: the boys loved the spaghetti (of course). Husband said it’s his new favorite meal 🤷🏻‍♀️ I’m giving it an 8:10 since everyone ate until they were full!

Quick “personal pizzas”.
My boys LOVED helping with this dinner so, I’ll claim this one as KID FRIENDLY TO COOK.

1 box of garlic bread or cheese bread.
1 jar pizza sauce or marinara
1 bag shredded mozzarella
Your and your families favorite pizza toppings.

I kept the garlic bread in the freezer until we were ready to use it, didn’t want it to thaw and cook too fast.

Preheat oven 375 degrees.

Add sauce to garlic bread, add your toppings then, top with cheese. Cook until cheese is melted or however you’d normally cook your frozen pizza.

One of our favorites for breakfast. Breakfast potatoes. They’re so versatile.

On the left, is a one skillet breakfast, plus eggs.

On the right, pancakes with strawberries and bananas, veggie bacon and skillet potatoes.

ONE SKILLET.

1 large zucchini
1 red bell pepper
1 yellow bell pepper
5-6 medium-ish red potatoes
1 garlic clove
Dash of cayenne pepper **
1 onion**
Salt and pepper

started with 1 tbsp butter in skillet melted on medium heat. Add potatoes, seasonings and garlic to skillet. cook about half way through turning over (but not often because you want them to be “crispy” on the outsides). Once cooked half way add in the onions**, zucchini and peppers. Continue turning same way. And finish cooking potatoes.

Once potatoes are close to finishing, cook eggs however you normally eat them and add to top!

Potatoes on right-

Red potatoes
1 tbsp butter
1/2 tbsp Italian seasoning (dried)

Cook these potatoes the same as above. Slow to turn them over and on low- medium. Pancakes are Walmart brand pancake mix topped with fruit and my sons favorite veggie bacon.

Salad with tomatoes and rice (random fruit and olives because I was pregnant 😅🤷🏻‍♀️)

Tomato’s and Rice

I use a lot of “boil in bag” however, cook as much as you need! I usually cook 2 bags of the rice for my family of 4 and have left overs for lunch the next day.

2 “boil in bag”, bags of rice
2 cans of diced tomatoes
**optional is 1/2 diced onion
1 tsp garlic powder or 1 clove of garlic
Salt and pepper to taste

Generally I drain the juice from the cans and use it along with whatever water is needed to cook the rice, from the directions. If using fresh garlic add to water along with onions to cook with rice.

Once the rice is cooked you add the rice, and tomatoes back into pot and heat until the tomatoes are hot. Add garlic powder to rice.

****optional*** you can drain the water and get the onions and garlic to add back to rice.

SALAD

Spring mix
Avocado
Blue cheese
Tomatoes
Croutons
English cucumber

Remember to always wash your fruits and veggies with warm water!

SUPER easy “candy corn” pancakes and apple sauce with chocolate chips.

The pancake mix is just the Walmart brand pancake mix with an egg and food coloring added to make orange. Cook on a low/med-low so that the color doesn’t brown. (Takes WAY longer but, the color stays). The eyes are chocolate chips, the mouth is cake writing gel and the nose I made a super small amount of whipped cream (heavy cream whipped to stiff peaks). HUGE hit for the boys.

Apple sauce is just jarred cinnamon apple sauce with a few chocolate chips thrown in.

Stuffed French toast, veggie bacon and oranges.

Stuffed French toast, made 6, 2 slice servings.

1 French bread
3 eggs
2 tablespoon cinnamon
1/4 brown sugar
1/2 cup milk
1/4 cup powdered sugar
2 tablespoons butter

FILLING
1 block cream cheese
1/2 tablespoon butter
1/2 cup black berries
2 tablespoons white sugar

Directions- mix together in a mixing bowl, the eggs and milk. Add brown sugar and cinnamon. Set aside. In another bowl add cream cheese, butter black berries and white sugar. Microwave for 30 second intervals until able to mix together (creamy mixture). Set aside. Cut ends off of French bread. Cut 2 inch sections with a slit in middle to add filling. Heat pan on med/med-high. Add 1 butter to pan and let melt. While pan is heating, add cream filling to the slit in the french bread. When pan is ready dip the stuffed pieces into the egg mixture and cook for 2-3 minutes per side of bread. Right before serving sprinkle powered sugar on top.

***However many veggie bacon and oranges you/your family will eat.**
