Oh my Lord!!!! 🥰 Tonight’s dinner was Wedge Salads and burger pattys… BUT. These were no normal burgers!! I mixed ground chicken and ground lamb, garlic, feta cheese, Mediterranean spices, red onions, salt and pepper and cinnamon!!!

Yesterday was experiment day! I had a spaghetti squash and was gifted some amazing tomatoes from a friends garden. That was all I needed to get into the mood for cooking something yummy. I cut the spaghetti squash in half and got the seeds out, after washing it really good on the outside. I poured a little olive oil and salt and pepper into the open halves and turned them upside down. I added tomatoes, one zucchini, sliced thin, and a lot of fresh garlic and salt and pepper! I put it into the oven at 400° for 50 minutes. When it was all done I scooped out the good stuff from the squash. I put all the rest of it into a pan, added some heavy cream, a little cooking sherry, and gave it a spin with my emulsion blender to make a sauce. It was delicious!!! Enjoy!!

How did I get to be this age, and never know this skill!?? Today my new friend Jen, had a private canning/ pickling class for Tori and I! This was so much fun!!! We all brought our supplies, veggies, jars, and got to work! In no time at all, we had so many veggies cut up and stuffed into jars. Jen added the pickling spice and brine, and got them boiling in the pot. We set timers, enjoyed some pizza and conversation before the assembly line started with getting lids screwed on tight. Thank you, Matt for your strength and willingness to touch those extremely hot jars!😬 I cannot wait. In 4 to 6 weeks we will have some yummy pickled veggies and I am so excited to know this new skill! What an exciting day!

*LOOFAH UPDATE! Tonight I cut up some of my loofah that have been drying on my back counter for a couple of weeks. I put them in the oven at 300° for about 40 minutes and then when they were cool, I peeled them. I washed them and they are currently drying. I learned some things in this process and luckily, I have a whole bunch more loofah still on the vine. I am so excited and cannot believe this is actually coming to fruition. Thank you so much, sister Heather for this idea!💗

You guys!!! I’m growing LOOFAH! It’s not usually grown here, because we don’t get a long enough, hot enough growing season. I’ve tried for a couple of years to accomplish this! The trellis coverage is stunning but it poured down rain last night so I needed to get them inside and dried… they will dry a little more inside and we’ll see what happens.. there are still many on the vine. It’s an experiment after all. I’m hoping they dry enough to peel them and get them ready to use! Wish me luck!

Can we please normalize giving gifts of homemade food?! Last week I was invited to a barbecue, they always have plenty of food so I decided to make little takeaway bags of homemade granola! 🥹 They were very well received, and I’m ready to make more!! I’m SO happy to be doing some home cooking for our Vegetarian, Vegan and Celiac kids, successfully!! It’s been a feat in ingredients, flavor and timing but so far so good. It warms my momma heart to hear them in the living room talking, laughing and bonding with Gwen, while I’m feeding the bellies with homemade goodness! Color me happy! 🥹♥️ The first night was a garlicky veggie soup, then giant impossible sausage stuffed mushrooms, and pesto gluten free pasta and salad… what should I make tonight?!!
