I had an idea that with this new business, I wanted to change the blend of beans for a few weeks around Christmas time! I was aware my roaster, Dimitar, was very capable!

I discussed with him in advanced and he proposed something wonderful.

One of the beans has been fermented with floral and syrupy notes, one of the beans stands the same, and one is a completely different bean. (Compared to our standard Organic Italian Espresso Blend)

I am in love!!!

The shots are dialed in!

Did I mention I have the best neighbors!? Leopoldo Figlioli is honestly a local gem of Marathon. (With almost all ingredients coming from Italy) They came by to show some love on their last day open before heading back to Italy for a month during our local slow season, but don’t worry they will be back and I look forward to it! Definitely drop by when they come back!!
