I debated even posting this article written without my knowledge of me and Daniels buisness. In the 12+years we have been running our Smokin Hot BBQ Food Truck and now 1.5 years of running our Smokin Hot Drive-Thru I have hardly ever posted anything!!
One of the main reasons is that although people mean well; deep down a lot are extremely critical!! Especially a BBQ buisness!! Running our Food Trucks and now this Drive-Thru location I cant tell you how many people (men) have pulled up to ask us, "is your BBQ really that good". The reasons are usually because they BBQ themselves, are apart of a well established BBQ team, or have been a world class BBQ judge and of course everyone thinks they are the Best BBQ' er out there!!
I look at those people and simply smile and say everyone's tastes are different and you may not like ours!! And you know what that is OK with us!! Because if your coming at me saying that already.. you are predispositioned to feel a certain way about what we are doing!
What people Do Not see and cant possibly understand is that BBQ for your family and friends is Fun and its not day in and day out for hundreds of different people with different taste buds and expectations of what they think your particular catergory of BBQ should be!
We have heard it All and when I say All I mean it!! Some people say we have too much smoke, others not enough, oh the Briskets dry, or your sauce is not what I expected, your cabbage is too mushy or not cooked enough, and oh your mac n cheese is too bland, I prefer gouda or sharp cheddar in mine!! Or how we should do things differently!! And Oh this BBQ place cant be that Good with all the many other Amazing BBQ places in the Memphis area!! Its like they want to not like it or find something Wrong!!
What those people Dont understand is that BBQ for Fun is quite different than running all operations of a buisness.. I have learned that we are Not cooking for a few people that like us or even know us. We are cooking many different things: Pork, whole chicken, smoked beef brisket, smoked wings, ribs, and countless sides!! All at once and every single day!! All while shopping for the meat, prepping it, staying up smoking it, serving it, handling the inventory, fixing broken things š¤£ .. not to mention making sure our taxes are paid and we have enough $$ to pay insurance, rent, grease trap people, floid fire suppression, utilities, permits etc!! I could Go on and On!!
We are cooking for 100s of different people every day who all are looking for different things! And if we make a little more than half think ours is OK and the others dont care for it!! Thats a total Win for US!!
I Never realized until me and Daniel opened up our actual Brick n Mortar just how HARD restaurant buisness was! We ran our Food Truck for years...but absolutely Nothing prepared us for THIS! Restaurant buisness is one of the hardest businesses out there let alone we picked the hardest category š¤£š BBQ is the one food where everyone thinks theirs is the Best and You get Absolutely No sleep!!
Opening this Drive-Thru spot has been ultimately the HARDEST venture me and Daniel have ever tried too accomplish together! In fact one month in the stress landed my Butt in the hospital! We often feel in over our heads and it has reeked havoc on our personal life! If you think you love your husband (work with them) and get No sleep and see how much you love each other after that!! Seriously though, working with Daniel has Never made me prouder of him!!
All that aside!! We wont say "ours" is the Best by any stretch! There are sooooo many other Amazing BBQ places in our area who are way Better and doing all operations way more efficiently than us! Our hats are OFF to yall and much RESPECT and Admiration to every single BBQ joint out there! We mean that!
What we do know: Our BBQ Buisness is God- Backed!! He is our promoter and We give Him all the Honor and Glory for any success we have had thus Far! He has protected us in every aspect.. Our Food Truck has run a successful 12+ years .. we bought it for nearly nothing and I can count on one hand how many times we have had to cancel because it couldn't get to a location! That is a Blessing in itself (anyone who owns a Food Truck will understand mechanical problems that come with it š¤£). We worked very hard for every single account we have gotten and Never once canceled!! Discipline is critical in the Food Truck World! I could go on and on with the Blessings of people and contracts that have come full circle promoting the BBQ Truck over the last 12 years !!
Its been the same with the Drive-Thru! So many people were looking for a Drive-Thru location and no one could find one or they wanted an arm and a leg for rent!! Guess what... God brought it to us!! We didn't look at it as luck no this Drive-Thru was from God!! What He Blesses No man can curse!!
With this being said! People dont support us because ours is the Best necessarily!! I think there is something about seeing the owners working in there.. the family feel you get when you come up to our 400 sq ft shack.. We dont just take your order and slam the drive thru shut! We have relationships with many of our customers! We are Not here to push out a bunch of plates we care about the quality of what is going onto those plates. One of the main attractions is that We give a magnitude of Food and at least if its Just Ok you can feed a lot of people and your pocket feels better! I can say, if your in a hurry ours is not for you.. we are small and it can take awhile sometimes! Also because we are such a tiny place we only make a certain amount for the day! The goal is to sell out or come as close to selling out as possible.. That guarantees that the Food our customers are getting is Fresh and not day old meat!!
Are we Perfect everytime, Hell No! I have learned that people in restaurant buisness expect perfection every single time with absolutely No grace or room for error! Quick to give out 1 star reviews and they have absolutely No idea the blood, sweat and tears that goes into it. The time away from our kids and families. Or even what it can do to a small buisness.. we are Not a corporate chain.
I have kept our buisness OFF the radar for a reason! I have had every newspaper and reporter ask for an interview.. (tik tik, u tube, and influencers ask to review our Food)! I always said No!! We do Not feel the need to hear their opinions when they have no clue what it is like to walk in our shoes!! Word of mouth has been our greatest advantage in the promotion of our small buisness .. In fact we do not even have a formal website!! This article was done without our knowledge!!
When your God-backed He is your promoter and I could absolutely cry at His Faithfulness over our Buisness! Haters will always be out there but God honors hard work.. We are Not rolling in it! We struggle with the rising food costs!! Bills rolls in daily.. a long line means nothing if you dont know how to handle money.. Food buisness is a very tiny margin to make money.. its grueling and it takes time to even see the fruit of your hardwork! But me and Daniel know One Thing!! That Every single Good thing we have comes from our Merciful Father in Heaven!! If He has Us it doesnt matter what we choose - He always makes a way for His people. We dont work in the World's economy (it fluctuates up and down) Gods Economy is always booming!
