I made stuffed bell peppers tonight
Zilla Stuft Bell Pepper Recipe
Ingredients:
- cup of quinoa,
- Ground turkey
- Chicken broth
- Tomato paste
- Diced tomatoes
- Pepper jack cheese
- Provolone cheese
- 1/4in diced Onion
- 1/4in diced portabella Mushrooms
- Bell peppers
- Bay Leaves
- Greek Seasoning
- Garlic Powder
- Garlic Salt
- Black and white pepper
- onion powder
- chili and onion oil
- Olive Oil
Step 1:
Rinse the quinoa until clear and boil 2 cups of water. Once it comes to a boil turn it on low and add your cup of quinoa with a lid and let it boil for 20 minutes then turn it off.
Step 2:
In another pot boil water and at the same time cut the tops of your bell peppers off. Once the water is at a rolling boil add you bell peppers for 30 seconds then take them out and place them in an ice bath
Step 3:
Your filling. In a skillet add olive oil and sautéed onion and mushrooms. Add your ground turkey and let it cook until it is done. Add in your chicken broth until it covers your meat. Add your dice tomatoes then bay leave and your tomato paste and add some sugar or honey to kill the acidity. Let that cook down over medium low heat for about 25-30 minutes. After it’s done take out your bay leaves.
Step 4:
lastly in your bell pepper layer it like a lasagna, meat sauce, quinoa, cheese, until you get the the top and bake it at 350 for 20 minutes and when it’s 5 minutes left add another layer of cheese on top and broil it until your cheese has toasted.
