Erica’s Baking Company Louis gooey butter center. My name is Erica Miller and I come from a family where food is the center of life. Food has always been there as a way of connecting.

First created in 2011, our gooey butter cupcakes and bites have a beautiful, caramelized, chewy and slightly crispy crust on the outside, while keeping the classic and soft St. From my dad’s short-lived bakery when I was a little kid, to my Nan’s kitchen in Michigan City. And now to my own home with my husband, Jason, and two teenagers, Aaron and Julia. Some of the best times I’ve spent in the kit

chen have been with my grandmother, Nan. She knew everything there is to know about cooking, and she taught me for 42 years. Our last time cooking together was in 2019. We were on the phone and she told me she couldn’t find her chicken recipe. I asked if it was the one with chicken and Swiss cheese. She said yes. I had her over to my house that weekend and we cooked her famous recipe together, side by side. It was such a meaningful moment in my life to be able to connect with her in the kitchen one more time. The one way we differed is that I love to bake. I’ve had a small business for the past 10 years called The Chocolate Rooster. Up until the quarantine, I’ve only focused on baked goods. All the sudden I found myself with extra time and started making YouTube videos and sharing some of my favorite cooking and baking tips, which has resulted in finally writing down my recipes so I can share them with you.

The Hybrid is back this week at LSL Farmers & Artists Market !! You can find me in the round next to the clocktower from 8-12! I’ll also have OG cupcakes and bites, pecan GBCs, and merch!!

THE HYBRID: chocolate rooster batter with a scoop of chocolate gooey butter batter added to the middle. Baked and topped with ganache. Absolutely delicious!

Yesterday was my 49th birthday and I got the best present from you guys - two sold out events!! Thursday at and today at Thank you so much!! 🥰

Next Thursday, August 6th, will be my last day at Rockwell Beer Garden for the season. You guys loved the gooey butter bar, and I’m bringing it back next week! I’ll be there from 4-7:45. I’d love to see you guys one more time!

Thank you to everyone that came out to today!! I didn’t realize how hot it was until I started packing up. You guys are troopers! Rain or ☀️ shine - you always show up and all of us vendors really appreciate it. I was told by many today that I had a nice little breezy and shady spot. You were so right. I didn’t realize how hot it was until I took my tent down. I looked at myself in the mirror after packing up my car and I was glistening ✨

Early this morning, I had several requests for specific cupcakes from my some of my customers, so I decided to make them for next Saturday.

Here’s what they want :
🍑 peach gooey butters - enough requests that I ran down to Baalmans Produce and bought some of their Calhoun peaches

🍋 🫐 lemon blueberry - he said blueberry, I asked if lemon blueberry was good and he was down. A lot of you are going to be very happy.

🍫 🥥 german chocolate - chocolate gooey butters w a caramel pecan and coconut frosting.

They’ll be available to purchase in singles and flights. Il lasso have the OGs. I do not take preorders, so please be sure to come early for the best selection!!
