At Deerhammer, our distilling is steeped in whiskey history, but our methods are infused with curiosity and creativity. We’ve analyzed each step of the whiskey-making process, to examine the impact each choice makes on our final product. Often, we’ve stayed with time-honored techniques—like our copper pot stills. Yet we’ve also found unexplored territory within that tradition by playing with our g

rain blend and opting for the wilder side of fermentation. The first taste of that experimentation is our cornerstone single malt. Starting its life as a porter-style 100% malted barley mash, it’s further shaped by open-air fermentation before passing through our stills and maturing in charred virgin white oak. Boasting a complex profile with notes of coffee and chocolate, you won’t mistake it for its Scottish or Irish counterparts. It’s a uniquely American product, with an exceptional taste of place. For us, that place is our home in Buena Vista, Colorado: a historic adventure town at the heart of the Rocky Mountains. Built on the banks of the Arkansas River, its famed whitewater currents are the reason our east coast founders first moved west. Each batch of our whiskeys has a touch of that hometown spirit, and we encourage you to take your first sip with an explorer’s state of mind.

Most AWESOME election ever... come to the distillery and cast your vote for what will be our next distillery-only single barrel pick! Polls will be open starting today at 1pm and closing on sunday at 8pm.
$8 gets you a neat pour from each of the candidates. Both are 5yr aged American single malt whiskeys - but with very different profiles.

I’d strongly recommend stopping by the tasting room today to catch a whiff of what we’re cooking up.

Whenever you hear a distiller touting rye as the most difficult grain to work with that distiller has most certainly not had the displeasure of making an oat whiskey. While we are looking forward to tasting this oat/corn/wheat based whiskey after years in the barrel… what a headache of a production process — this will NEVER be repeated again!

These 2 bourbon barrels were just filled with white dog — same grain bill as our standard 4-grain bourbon (corn,wheat,oats, crystal malt), but these 2 batches were both fermented for 8 days with a Belgian yeast. Definitely had some unique character on the distillate side. We’ll see how the flavors develop over the next 5 years!

Oooh! I have an idea… let’s make an experimental batch of whiskey today. The grain bill should be 65% oats, 25% corn, and 10% wheat. Don’t have any beta-glucanase, but I don’t think it’ll matter much...

This is a pour of an experimental bourbon mash that was fermented 8 days with an English barleywine yeast. Once the bits of corn, oats, wheat, and barley were filtered out… this stuff is pretty tasty with a definitively unique profile from the yeast at this stage of the process. We’ll see what kind of flavors carry through and develop after double distillation and 5+ years in the barrel.
