Pasta alla Norma🍝
A classic Sicilian pasta dish featuring roasted eggplant, sweet cherry tomatoes, and creamy ricotta salata. Perfect for a taste of the Mediterranean!
Ingredients:
• 16 oz pasta
• 1 eggplant, cubed
• 1/2 cup ricotta salata
• 1 cup cherry tomatoes, halved
• 2 tbsp olive oil
• 2 cloves garlic, minced
• Salt and pepper to taste
• Fresh basil leaves for garnish
Instructions:
1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
2. Heat olive oil in a pan over medium heat. Add cubed eggplant and cook until golden and tender.
3. Add garlic and cherry tomatoes, and cook until tomatoes are soft.
4. Toss in the cooked pasta, mixing until everything is well combined. Season with salt and pepper.
5. Serve with crumbled ricotta salata and fresh basil on top.
Tip: For an extra burst of flavor, add a sprinkle of crushed red pepper flakes!
Ingredients (serves 4 people)
2 large aubergines
3 tins chopped tomatoes
1 onion, chopped finely
1 clove garlic, chopped finely
A bunch of basil
Extra virgin olive oil
Salt and pepper
80g grated ricotta salata (salted ricotta cheese)
400g rigatoni or, if you can get them, fresh caserecce or maccheroncini
Procedure
Cut the aubergines into small cubes and fry until golden brown in olive oil. Take out and place on kitchen paper to remove some of the oil. Sprinkle with a little salt.
Finely chop the onion and the garlic and gently sweat in some olive oil. Once the onion is soft, add the tinned tomatoes, tear in some of the basil and season to taste. Stir well and leave to cook slowly with a lid on for about 30 minutes, stirring occasionally.
When the sauce is almost ready, cook your pasta al dente, drain and add to the tomato sauce. Mix well and place in a serving bowl. Top with the chunks of aubergine and a few torn basil leaves and take to the table with another bowl of grated salted ricotta cheese. Buon appetito!
