After a great deal of thought, Amanda and I have decided to sell Easy Company Café and begin its next chapter under new ownership.
We want to be clear that this decision is not because the café failed. In fact, we are incredibly proud of how far it has come. With no construction or restaurant experience, we took an old office building and transformed it into a fully approved commercial restaurant. Then, without ever having worked in a restaurant or coffee shop, we opened the doors and learned how to operate the business one day at a time.
It has been one of the most challenging and rewarding experiences of our lives. We are grateful to every employee, customer, veteran, first responder, friend, and community member who helped make the café what it is today.
We will continue to own the building, but we have reached the point where we believe the café will benefit from an owner with years of restaurant experience who can continue improving it and take it to the next level.
We are excited to introduce the new owner, Victor Lopez. Victor grew up right here in Lincoln, spent many years cooking at Kim’s Country Kitchen, and is also the owner of La Villa. He brings a great deal of experience, a strong work ethic, and a genuine appreciation for our military service members, veterans, and first responders.
Victor understands what Easy Company Café represents and plans to continue the patriotic theme and the tradition of honoring those who serve our country and community.
As part of this new chapter, the café’s schedule will also be changing. Easy Company Café will now be open every day from 7:30 a.m. to 2:00 p.m.
Amanda and I will be working closely with Victor during the transition, and we hope everyone will welcome him, support him, and continue supporting Easy Company Café as it moves into this exciting new chapter.
