My own creation. One day I was shopping at Trader Joe's and saw a container of Saffron for the first time so I bought it. When I got home I opened it to see what the fragrance smelled like.
My mind defaulted to Persian Tahchin (Saffron Rice) but no, savory is too obvious. I had to make something unique with it and go in a direction that most people wouldn't think to... Dessert.
The first thing that I thought of was Saffron Ice Cream, which does sound amazing, but I had never looked into making that from scratch before. Then it clicked.. what if I made an Oreo with saffron creme. That is when it took off, I researched many different recipes for cookies that could be used as a sandwich and recipes for creme filling. I combined these recipes to invent my own concoction.
I wrote down the recipe measurements as I worked on it and did a test batch. The cookie dough was tough to work with, it crumbled a lot but I found that once the cookies were put together they seemed to keep a decent structure.
It started with a citrus (lemon and orange zest) cookie base with a saffron infused creme and that saffron creme was... addicting.
The following year I wanted to try something new. I was talking to my sister about her lavender plants and got the idea.. would lavender and saffron taste good together? The answer was absolutely!
Following the floral aromatic tea type of theme I created a hibiscus cookie sandwich with a creme made from fresh cherries. (probably my favorite)
Then this past year I got a little more experimental doing a Blueberry Blue Lotus cookie using dried blue lotus flowers from a great local shop here in Denver called Terra Apothecary paired with a violet creme filling made from violet liquor, these flavors were so great together. I was missing the saffron creme so I also made a batch of saffron cremes with a magnolia cookie.
