No filter summer time grilling🔥 Love having fresh green onions as a side. No seasoning, just throw them right on the grill until they soften and get a little char. 😍 Pairs perfect with a set of BLT sandwiches.

Brisket is one of those meats that I'm always afraid to cook. Its expensive and requires all your attention to get it just right. Today I can say I finally made one that met my standards. Juicy, tender and full of flavor. The mac and cheese was of course amazing as it always is. I was so excited about the brisket I completely missed the picture of the pork butt and the bbq baked beans.🤦‍♂️ Oh well I assure you it was also delicous.

Amazing Sunday in the books. Lots of my own chores done then thanks to got to be apart of capturing a bee swarm. Bees are extremely fascinating and fun to work with. Then it was all wrapped up by cooking up my pheasant on the grill. This is not my recipe but this is how it was done and you could use this on just about any bird you wanted to.

Pound breast thin
Mix cream cheese and spicy jelly
Spread mixture on the breast and roll up
Wrap in bacon
Cook at 225⁰ until it reach 165⁰ 1-2 hours

I needed to find a way to consume more calories and protein all while being healthier. I remembered back to my trips to Costa Rica where they would serve a dish called Gallo Pinto. It is a rice and bean dish served with eggs for breakfast. We don't think of rice and beans as a normal breakfast food but it sure beats buttered toast. The best part is you can make it ahead of time and eat it all week.

2 tablespoons vegetable or olive oil
1 medium onion, finely diced
2 cloves garlic, minced
1/4 cup coarsely chopped fresh cilantro leaves, more for garnish
1 medium red bell pepper, finely diced
1 teaspoon ground cumin
2 to 3 teaspoons Worcestershire sauce
2 cups black or dark red cooked beans, with liquid
2 cups cooked white rice

Place the oil in a large skillet over medium heat.

Add the chopped onion, the garlic, the red pepper, and the chopped cilantro. Cook, stirring often, until vegetables are soft.

Add the cumin and Worcestershire sauce and cook for 2 to 3 more minutes.
Add the beans and their liquid, and cook for 1 minute.

Add the rice and stir until rice is well mixed with the beans and there are no clumps of rice.

Cover skillet, lower heat, and let mixture simmer for 1 to 2 minutes, until rice is heated through.

Season with salt and pepper to taste, adding more salsa lizano or

Back to food.... Made a steak tonight to go with asian noodles for lunch tomorrow. I tried something different by rubbing the steak in mustard then coating it in a heavy coat of beef rub. Threw it on the Traeger at 375⁰ until it hit 135⁰. While cooking it created almost like a bbq sauce on the outside with a nice smokey flavor that will go perfect with the noodles. Nothing fancy but any reason to show off my cool cooking stuff.
