Hi again!

Here's what we did on Day 3!

Ginger Fried Tofu over rice noodles and mixed veggies. Garnished with green onion and toasted sesame.

For dessert, we had a locally made Pono Pie, which we garnished with a homemade blueberry compote!

Day 2 of lunch this week!

Today's menu was:

"B"LT's - Gluten free bread with tempeh bacon (this was crazy good! Thanks, ), lettuce, tomato, guacamole, and mayo. On the side they got a crunchy pickle and some pimento olives 🫒

For a sweet treat, we did cucumber and watermelon chips, drizzled with a manuka honey and lime dressing, fresh mint, and just a touch of salt. So refreshing and delicious! 😋

Our latest clients requested a week's worth of vegetarian and gluten free lunches, and we were happy to oblige! 😌

Here's day 1:

Roasted Butternut Squash Cup with Lentil Curry, Cilantro-Mint Sauce and Greek Yogurt, over a kale salad mixed with some of the Mint-Cilantro sauce and a lovely white balsamic.

Here's the grand opening event we just did for Maui Friends of the Library's newest location, in Kihei! It was such a lovely event, and we had an awesome turnout.

If you haven't been by, come check it out! All proceeds from the books sold go to our local library system. It's a wonderful cause to support, and one that I volunteer at weekly. 😊

The food:

Tri-Color Hummus: Traditional with extra lemon and tahini, Beet with Sesame and Herbs, Avocado with Pico de Gallo (served with everything bagel chips and multi-grain crackers, and fresh veggies)

Antipasta Skewers with Garlic Olive Oil (from the roasted garlic in the next dish 😉), Salt and Pepper

Sauteed Mini Pepper Bruschetta, with roasted garlic spread, goat cheese, balsamic reduction, and herbs.

Cookie Tray: (on top) Gluten Free Lemon Shortbread, (on bottom) Chocolate Chunk, Snickerdoodle

Here's some of the dishes I made on Molokai the other day!

-Ahi Poke with Limu, Green Onion, Chili, Taro Chip

-Surf and Turf - Filet with Smoked Pineapple Chutney, Prawns with Garlic Coconut Sauce, Purple Molokai Sweet Potato Puree

-Lilikoi Tart (made with fresh lilikoi!), raspberry sauce, vanilla bean whipped cream.

I actually had a surprise guest, the cute pup Mana, who got a couple fried eggs, some plain purple potatoes, kale, and raspberries, too. 😋🐶 No one goes hungry on my watch!

Today's Tasty Treat: White Chocolate Lemon Truffles!

The roommate saw this recipe, and we both really wanted to try it. They are super bright with both the lemon zest and juice in them! I'm popping them in the freezer now to harden them up. Excited for later 😋

I feel like these would be great to be added to my tea party menu... what do you think?

It always amazes me how simple ingredients can come together to make such bold flavors.

Here's a stir fry I made for dinner last night! Chicken thighs, fresh veggies, Pancit noodles (one of my favorite local brands), shoyu and rice vinegar (if you know, you know), and fish sauce.

Simple but delish!
