Smoked pork belly cinnamon rolls. I took what I've learned in my last few cooks to come up with this. Bad Bitch coffee rub on the outside, inside I used TRUFF , my ceylon cinnamon roll filling and smoked for 7 hours. Braised/galzed with a pineapple rum sauce and sichuan pepper/thai chili hot honey. I am very excited to get one of these in my face

4 years now! We appreciate Comedy Key West for giving us the opportunity to start up and Wicked Lick Key West for our new home and look forward to growing and whatever happens next. We have been blessed with finding new friends like Key West Legal Rum Distillery for our barrel aged coffee and Key West Rum Festival for all of the opportunities to spread the word about what we are doing. We are happy to have made Key West our home and remain so proud of what we have accomplished. I always say that we have the easy part in the supply chain and all credit goes to the growers we use.

Key West Rum Festival was a great time. We loved seeing familiar faces and meeting new people. Looking forward to next year, but until then we will keep it pushing. We have a few new things coming that we are working on and can't wait to share

Might have put too many mangos in here, but they are going to be delicious. Sweet sourdough mango rolls should be out around 10am tomorrow. Sourdough is pretty much a 3 day process to get them where we like them. All of the fresh mangos in town seem to be gone, so I picked up a bunch on my trip to get more coffee a couple days ago.

Much needed day on the water with the fam. My brother dodged the pic and my sis in law wanted to be sassy. Been too long since seeing everyone and it did my soul good.

So many people dont know, but I've been into bbq and running smokers longer than I've been into coffee. I am trying to make more time to combine the two and will be working on my Bad Bitch rum barrel aged coffee rub soon. This was just an experiment hanging ribs on a drum smoker for the 1st time--4 ways with a base rub that I made to use on each. Smoked straight up, no spritz hung for about 2 and a half hours. Pulled with the 1 (control) wrapped with a little brown sugar and a hit of bourbon, 2, hot honey glaze, 3, Pineapple Chipotle and 4, Raspberry Chipotle for an hour and then foil boated then to tack up. Perfect clean bite, not fall off the bone. Really happy with how everything came out and looking forward to what's next because this weekend I'm smoking an 18 lb brisket...traditional for the 1st run and then I'll play a bit with the coffee rub later in the week.
