It’s so weird setting up during the day for evening service. And I just realized we’re not super set up for night time on the lot. It’s gonna be a real high school makeout party vibe while you eat. Maybe BYOHeadlamp 🤣

I made about 4 days of food for tonight, so this place better look like the scene in Thriller with the zombies trying to get into the house. Come on in like ravenous bears. Zombie Pig-a-let Apocalypse!! Just get on in here hungry.

Reminder that we are only open tomorrow evening, 4pm-8pm, this week.

I’ve already starting playing for next week’s menu. You may not see any of these things, as the attempts often go awry, but here’s hoping. Bryan is smoking me a couple of ducks for some Duck & Andouille Gumbo. First time I’ve attempted it. And right out my front door has been the sweetest blessing of blackberries! I grew up picking them every summer so this has been making me giddy. I’m going to attempt a Blackberry BBQ Sauce. What is it going to go on, you ask? That’s a good question. With no answer yet. Who knows? It’s play week so no telling. I’m just glad I got to them before the bear did.

I’ll see all you Pig-a-lets tomorrow evening. Come hungry! Come happy! It’s gonna be fun 🙂

Go little Southwest Eggrolls! One more batch for sale today before we move into the weekend. It will be the LOCAL/REGULARS Special today. $10 bucks for an order of Eggrolls with an iced tea or $11 if you want a bottled water or canned soda instead. A smart girl would have taken a picture of them yesterday during service, but of course I didn’t, so enjoy a picture of Bryan looking like a hot nerd, eating one.

Good Morning and Happy Thursday! Welcome to our last full week of service. We’re here a couple more weekends, but it’ll be a couple of event days which I’ll post about in the next day or so.

I made Southwest Eggrolls, which is a recipe I just haven’t nailed yet. I always worry I’m over salting so I end up under seasoning. So come have some “just good” egg rolls. I’m an amazing salesman, I know.

They still funly remind me of being a teenager, going to malls and then going to, like, a Chilis after. When I was 11, my neighbors in little ol’ Bush, Louisiana loaned me “cool” cloths, dolled me up and feathered my non-existent bags as best they could, and told me, “If anyone asks, you’re 13.” Because we were going to the Esplanade Mall! I guess to troll for boys? Which my 11 year old brain had no real concept of. But I did feel very cool in what I can’t remember were either borrowed Guess jeans or Z Cavariccis. And we did end up hanging out with these boys who were shopping for Drakkar Noir cologne. For real. This sounds like a bad after school special, but, yeah, this was the pinnacle of life in 1990.

Thank you to everyone that came out to Knudson and had gumbo last night, especially after I barely mentioned it the other day 🤦🏼‍♀️ I’m killing it on this social media thing, y’all. September has zombie sucked my brain out.

Enjoying my donut before it’s donut break week to save me from my piginess. And Bryan is heading to Seattle for 4 days so booooo to everything.

I’m gonna do a big inventory to see where we are so I can give you guys a closing date soon. We will be finishing up this month but we’ll be around, as usual, probably digging more holes. And the last day will be a big crazy whatever-I-wanna-make day as always.
