Ready for delicious?

Nothing says easy Sunday morning like homemade honey mustard ham and a chocolate souffle!

The souffle is super easy, preheat your oven to 350F and take 6 eggs separating the yolks from the whites.

Chop up half a cup of mango and another half cup of fresh strawberries. Butter a large souffle dish (or high walled cake pan) and add the fruit to the bottom. Drizzle with honey.

Melt 4 ounces of unsweetened chocolate and stir in 2 tablespoons of honey and a dash of coconut milk. Mix in with the egg yolks until smooth.

In an electric mixer add the egg whites and a pinch of Cream of Tartar (you MUST have the cream of tartar if you are not using a copper mixing bowl). Mix on high until stiff.

Fold in the chocolate egg yolk mixture to the egg whites, pour into the pan and bake for ~30 minutes, until the middle is set!

For the ham I just mixed 2 tbsp of good mustard with a tablespoon of honey :)

Looking for something delicious and healthy to make for breakfast? How about some beet pancakes??

You need a pint of blueberries, half cup of our superhero sauce (beets and apples baked together and mashed like apple sauce), 6 eggs separated, a tablespoon of almond flour and a teaspoon of cinnamon. We are going to whip the eggs until super fluffy, which only works if you have a copper bowl OR you add in a pinch of cream of tartar in with the eggs - so depending on your bowl you might need some cream of tartar as well.

Mix the egg yolks, superhero sauce, almond flour and cinnamon together and set aside. Beat the egg whites (and cream of tartar if needed) until stiff, much like you would for a souffle.

Mix in the bet mixture to the eggs and you are ready to start making pancakes! If you like extra fluffy pancakes then start cooking them right away, if you prefer more dense pancakes then wait for 10-15 minutes before putting them on the griddle.

Use 1/4 c scoops on a greased griddle over medium heat (you don't want it to cook too fast) and top with blueberries. After about 3-5 minutes flip and cook another 3-5 minutes and serve!

We've made some delicious desserts with beets so far, but now for some serious food - here is a great easy recipe for baking up some winter root vegetables!

You'll need a few tablespoons of olive oil, some salt and pepper, 3 parsnips, 1 large beet and about a pound of brussels sprouts.

First you will want to start the beet boiling, you dont need to cook it for the full 45 min to an hour, but you will want to give it a good half hour. Once it is partially boiled peel it and chop it up. I used shaved brussel sprouts from Trader Joe's, which cut down on the prep time some, and then chopped up the parsnips.

Preheat your oven to 350F. In a large bowl mix up the beet, parsnips and brussel sprouts with a healthy amount of oil, you want all the veggies to have a nice glisten to them, but not so much they are drowning in oil. Season with salt and pepper and toss it into the oven for 50 minutes - the perfect amount of time to prep and cook some sort of delicious meat to go with it!

Superhero Sauce!

This is a super easy and delicious recipe perfect for the sweet tooth in your family! You need a large beet, two apples and some cinnamon or cinnamon sticks!

Boil the beet for about an hour, until it is very soft. Peel it under running water and slice it into wedges. Slice the apples as well and place into a greased dish with a few cinnamon sticks, cover in foil. Bake for 2 hours at 350F. When it is dont you can serve it as slices or opt to blend it into a beet-apple sauce, adding a dash of cinnamon to it!

It's beet month!!! Our first recipe is a paleo Red Velvet cake!!!

You'll need 5 ounces bittersweet chocolate, 1/4 c butter (we use grass fed, but you can also use some other tasty fat you like), 2 tbsp honey, 1 large beet, 3 eggs and 1/2 c almond flour.

Preheat your oven to 400F and put a pot of water on to boil. You will have to boil the bett until it is soft, this can take anywhere from 45 min to an hour or longer depending on the size of the beet. Once our beet is boiled you will need to cool it, peel it (this rubs off easily under a stream of water), slice it and puree it in a blender.

In a double broiler (or in a boil over hot water) melt the chocolate and butter together.

In a mixer beat 3 eggs on high for about 5 minutes, then beat in the honey, beet puree, chocolate sauce and finally the almond flour.

Pour the batter into greased ramekins and bake for 18-28 minutes, depending on the depth of the dish (my shallow dish baked for the 18min, my deeper ramekins baked for the extra ten minutes).

Cool and serve! You can also frost them if you desire, there is a mostly paleo recipe here
