It's beet month!!! Our first recipe is a paleo Red Velvet cake!!!
You'll need 5 ounces bittersweet chocolate, 1/4 c butter (we use grass fed, but you can also use some other tasty fat you like), 2 tbsp honey, 1 large beet, 3 eggs and 1/2 c almond flour.
Preheat your oven to 400F and put a pot of water on to boil. You will have to boil the bett until it is soft, this can take anywhere from 45 min to an hour or longer depending on the size of the beet. Once our beet is boiled you will need to cool it, peel it (this rubs off easily under a stream of water), slice it and puree it in a blender.
In a double broiler (or in a boil over hot water) melt the chocolate and butter together.
In a mixer beat 3 eggs on high for about 5 minutes, then beat in the honey, beet puree, chocolate sauce and finally the almond flour.
Pour the batter into greased ramekins and bake for 18-28 minutes, depending on the depth of the dish (my shallow dish baked for the 18min, my deeper ramekins baked for the extra ten minutes).
Cool and serve! You can also frost them if you desire, there is a mostly paleo recipe here

It includes cashews which aren't technically paleo - it depends how strict you are!
