Prior to this past weekend it has been a while since I made these! Texas twinkies are afavorite appetizers filled with brisket and cream cheese then wrapped in bacon. I add my own twist to them by seasoning with my brisket seasoning and glazing with my own bbq sauce!

The bbq pits are where it all starts. A labor of love! The first one is the one that started it all. A now 12 year old pit it has seen some better days because it’s a bit beaten now but is still putting in the work like a million mile Toyota and on backyard duty now. if you are listening I could use a new one. It has done well for me and there are awards to back it up. The second one is the trailered I currently use for my competitions now but even that one I’m out growing especially with the increase in catering business. And yes that other pictured is a smoker and was a filing cabinet in Louisiana in its past life. I have used it a few times especially for beef rib street tacos! The biggest one is not mine but the pit I use when I compete at the Houston Rodeo Cook off. I bond and enjoy cooking on all these pits and you can never have too many 😂

Went outside of the box yesterday in order to gain a different perspective of the bbq world. I had the opportunity to participate in a cook off as a judge rather than a competitor at the BTR Cajun Throwdown at Bayou Fest in La Marque, Tx which was a sanctioned state championship cook off by the Champions Barbecue Alliance. It was a fun event and I had the pleasure of judging some amazing pork butt and brisket turn ins. Unfortunately I was not able to take pictures of the turn in boxes but there was no doubt some amazing presentations and great tasting bbq that I had the pleasure to judge.

This is what we’ve got going on for the remainder of the year. Two cook offs have been added to the schedule with TBD, which is still to be determined if we will officially participate in those cook offs. If you’re available on any of these dates we look forward to seeing you out there.

Once it was decided we would compete in bbq cook offs not only was a team name needed but a logo as well. The first picture is a logo I designed and had made into shirts and a banner. Eventually inspiration from a toy would open the door to the creation of a new logo and the team mascot everyone knows as “Carl”. As you can see Carl became the center of the new logo but with hidden secret. A friend of mine designed the new logo but I had one request. The original logo I had created had to be a tattoo on Carl’s arm. A lot of people never caught this little Easter egg. Zoom into the picture and see for yourself.

This month marks the 12 year anniversary of Goot Ole BBQ

What started as bbq Sunday’s in the driveway with family & friends has turned into 12 years worth of cook offs, catering events, and so many memories. Here is a throwback to the first cookoff Goot Ole BBQ competed in. Throughout this month we will be sharing our journey from where we started to where we are now as well as a very big announcement at the end!

Another Houston Rodeo Cook off is in the books. It was a fun and exhausting time all rolled into one. Unfortunately the judges were not so kind this year but that’s how it goes sometimes. If there was a people’s choice for food we would have nailed that as we were going through food at an alarming rate. Thank you to everyone who came out to see us. We look forward to next year. In the meantime it’s back to cook off business with another bbq cook off in two weeks! #7-SCookers

Cook off update. We kick off our cook off season Feb 21 with a chili cook off and we now have a date for our crawfish cook off which is May 16.
