Vive la France! 🇫🇷

This July, we’re celebrating Bastille Day with a special four-course French dinner inspired by the people who shaped me as both a chef and a person.

Growing up in France, I learned that food isn’t just about eating—it’s about sharing stories, preserving traditions, and bringing people together. This menu is a tribute to my family and the generations that taught me to love cooking.

🥂 First Course

House-Smoked Salmon Platter

House-smoked salmon, dill cream, pickled red onions, pickled mustard seeds, and toasted sourdough bread.

This appetizer is inspired by my grandfather, who was a chef in the South of France. I’m honored to prepare his smoked salmon recipe, one that I grew up watching him make and that reminds me of countless family celebrations. Sharing it with you feels like sharing a piece of my family’s history.

🥣 Second Course

Classic Vichyssoise

A silky chilled soup of leeks, potatoes, and onions, finished with crème fraîche and fresh chives.

This course is dedicated to my grandmother, who wasn’t a chef, but believed every great meal—whether it was a holiday, birthday, or simple family dinner—always began with a homemade soup. She had a remarkable gift for bringing people together around the table, proving that love is often expressed through the simplest dishes.

🍷 Main Course

Daube de Bœuf Provençale

Traditional slow-braised Provençal beef stew with red wine and tomatoes, served with Parmesan & olive polenta and a Tian of summer vegetables.

This dish honors my other grandmother, who was born and raised in Provence, a region celebrated for its vibrant cuisine, fresh vegetables, olive oil, herbs, and slow-cooked family recipes. She taught me that the best meals don’t need to be complicated—they simply need patience, quality ingredients, and the people you love gathered around the table.

Chef’s Chocolate & Espresso Decadence

A luxurious multi-textured dessert celebrating the timeless pairing of rich chocolate and bold espresso.

To finish the evening, I’ve created a dessert that reflects my own culinary journey—a modern interpretation of one of France’s favorite flavor combinations, bringing together rich chocolate and bold espresso in a refined, indulgent finale.
This exquisite and unique menu will be at the price of $59.99

This week, we’re taking you on a summer journey across the Mediterranean, from the vibrant flavors of Tunisia 🇹🇳 to the timeless traditions of Spain 🇪🇸, finished with a refreshing European dessert perfect for a warm Kauai evening. ☀️

🥙 First Course – Tunisian Fricassé

A beloved North African street food featuring housemade fried bread stuffed with tuna, potatoes, hard-boiled eggs, olives, and harissa. Crispy on the outside, soft on the inside, and packed with bold Mediterranean flavors.

🇪🇸 Main Course – Pollo en Pepitoria

One of Spain’s oldest and most cherished dishes. Tender chicken is slowly braised in a rich saffron and toasted almond sauce, creating a velvety, deeply flavorful stew. Served with roasted potatoes and seasonal roasted vegetables to soak up every drop of the delicious sauce.

🍋 Dessert – Lemon Posset & Brown Butter Sablé

A classic English summer dessert made with fresh lemon and cream, chilled until silky smooth and served alongside a buttery brown butter sablé shortbread cookie. The perfect balance of bright citrus and rich, delicate sweetness.

Thank you for the love of cooking, hardworking and caring grandpa, I’m forever inspired and looking to perdure your culinary legacy ! Don’t go annoy grandma too much up there ! 🕊️

There are people in life who leave behind more than memories.
They leave behind a way of doing things, a passion, a spirit that keeps living through the people they touched.
My grandpa, Clovis, was one of those people.

From the very beginning, there was a special connection between us. We shared the same birthday — June 13th — and growing up, I always felt like that meant something deeper. Even more, Clovis is my middle name, something I now carry with even greater pride.

He was an incredible chef and pastry chef, gifted not only with talent, but with his hands. He could create beauty out of anything. I still remember him sculpting flowers out of marzipan, or turning a simple potato into shoes, flowers, or little works of art. Toward the end of dinner, he would look at me and say, “Tony, go grab me a potato.” I already knew what that meant — he was about to teach me something again.

Cooking was never just food to him. It was love.
The way he expressed himself was through hard work, through creating, through watching the expression on your face when you tasted or admired something he made. That reaction meant everything to him.

In Port-Cros, near my hometown of Hyères in France, he owned a restaurant that reflected who he was: passionate, original, and larger than life. He even did an underwater photoshoot cooking beneath the sea to promote the restaurant — something so uniquely him, blending creativity, boldness, and his endless love for his craft.

During his retirement years, his artistry never stopped. He continued creating beautiful desserts and cakes, always sharing his passion with others. He taught me how to make my very first croquembouche, a memory I will carry forever.

He was, and still is, one of my greatest inspirations.
He taught me the value of working hard, striving to create something meaningful, and inspiring others through passion and dedication. In so many ways, the person I am becoming is rooted in the example he gave me.

Thank you, Grandpa, for everything you passed down to me — not only recipes or techniques, but a way of loving through creation, discipline, and generosity.

You inspired people your whole life, and you will continue to inspire me for the rest of mine.

A fresh mixed green salad with crisp sliced apples, sweet raisins, and house vinaigrette, served with a toasted crostini topped with piped goat cheese and finished with warm peppered honey.

🇧🇪 Main Course – Carbonnade Flamande
Traditional Belgian beer-braised beef stew, slow cooked until meltingly tender in a rich dark sauce with caramelized onions and herbs, served alongside roasted potatoes and carrots.

🍐 Dessert – Brown Butter Roasted Pear
A whole roasted pear glazed in nutty brown butter, finished with toasted sliced almonds and warm spices for the perfect comforting ending.

1- 🇫🇷🇮🇹Grandma Adrienne Pesto Minestrone
( A classic in my region, and particularly in my family, it’s traditionally called « soupe au pistou », a pesto based vegetarian soup, with bunch of vegetables and topped with grated Parmesan. This version is my grandmother’s recipe) !

2- 🇲🇦 Moroccan Apricot & Dates Lamb Tajine, Couscous And Grilled Vegetables (Can be Substituted with Chicken or vegetarian if you prefer)
(Delicate braised lamb/ Chicken in flavorful spiced broth -(non heat spice) served with couscous and marinated grilled vegetables)

3- 🇮🇹 Lemon Olive Oil Cake, Rosemary Lemon Cream Cheese frosting
