This July, we’re celebrating Bastille Day with a special four-course French dinner inspired by the people who shaped me as both a chef and a person.
Growing up in France, I learned that food isn’t just about eating—it’s about sharing stories, preserving traditions, and bringing people together. This menu is a tribute to my family and the generations that taught me to love cooking.
🥂 First Course
House-Smoked Salmon Platter
House-smoked salmon, dill cream, pickled red onions, pickled mustard seeds, and toasted sourdough bread.
This appetizer is inspired by my grandfather, who was a chef in the South of France. I’m honored to prepare his smoked salmon recipe, one that I grew up watching him make and that reminds me of countless family celebrations. Sharing it with you feels like sharing a piece of my family’s history.
🥣 Second Course
Classic Vichyssoise
A silky chilled soup of leeks, potatoes, and onions, finished with crème fraîche and fresh chives.
This course is dedicated to my grandmother, who wasn’t a chef, but believed every great meal—whether it was a holiday, birthday, or simple family dinner—always began with a homemade soup. She had a remarkable gift for bringing people together around the table, proving that love is often expressed through the simplest dishes.
🍷 Main Course
Daube de Bœuf Provençale
Traditional slow-braised Provençal beef stew with red wine and tomatoes, served with Parmesan & olive polenta and a Tian of summer vegetables.
This dish honors my other grandmother, who was born and raised in Provence, a region celebrated for its vibrant cuisine, fresh vegetables, olive oil, herbs, and slow-cooked family recipes. She taught me that the best meals don’t need to be complicated—they simply need patience, quality ingredients, and the people you love gathered around the table.
🍫 Dessert
Chef’s Chocolate & Espresso Decadence
A luxurious multi-textured dessert celebrating the timeless pairing of rich chocolate and bold espresso.
To finish the evening, I’ve created a dessert that reflects my own culinary journey—a modern interpretation of one of France’s favorite flavor combinations, bringing together rich chocolate and bold espresso in a refined, indulgent finale.
This exquisite and unique menu will be at the price of $59.99
