Who says turkey is a MUST have on Thanksgiving? Guess who had a GREAT day off? This year I was able to enjoy Thanksgiving and didn’t have to cook? CRAZY! Who wants to take the bet I’m not getting a Chinese Food dinner on Christmas?

Coconut-Pear-Ginger Dal

I have two teenage sons, so I doubled the recipe. Listing my deviations:
- 2 grilled red peppers
- 4 Ripe Bartlett pears
- I love texture, so I medium diced the pears and a onion
- Large bayleaf
- Smoked paprika
- Coriander powder
- Vegetable stock
- Carrots
- Celery
Served over steamed white rice. I know I’m supposed to use brown but I just felt like white rice would create a colorful contrast.

The husband figure brought some Stacy Chips… OH BOY! They worked so well with this thick, filling dish!

Love to hear what you would do to change up this YUMMY recipe.

One of my proudest moments is when my youngest out bakes me! So proud of my son who created these delicious Chocolate Chunk cookies. Man look at their perfect shape! The chunks are milk chocolate, so I have to hear how amazing they are. Sigh!

BUT!!! I made them look good… Pictures by MOMMY! HA!

Excited to spend the 4th creating! Cinnamon sticks always bring a dish to life. Did you know it also increases the sweetness of a dish without adding sugar? YUP! Working on composition and cropping today.

Just in time for the 4th. Marinated Chicken skewers waiting to dance with its barbecue reduction. Veggies were tossed in olive oil and spices then grilled until YUM!!!
