๐'Tis the season for Irish Soda Bread. Pick up a fresh loaf at Sprouts, cut it into cubes and serve it with a beer cheese dip (with or without the beer!) for a fun St. Patrick's Day spread. ๐ซ๐
Beer Cheese Dip
Ingredients
2 Tbsp. (28g) unsalted butter
3 Tbsp. (24g) all-purpose flour
3/4 Cup (180ml) whole milk or half-and-half
2/3 Cup (160ml) beer (optional)
1 tsp. Worcestershire sauce
1 tsp. Dijon mustard
1/2 tsp. garlic powder
1/4 tsp. smoked paprika
1/4 tsp. salt
2 and 1/2 Cups (315g; 10 ounces) sharp cheddar cheese, freshly shredded
Instructions:
1. Shred cheese and set aside.
2. Melt butter in a medium-sized saucepan over medium heat.
3. Add flour and whisk until a thick and clumpy paste forms (about 1 minute).
4. Slowly and steadily whisk in milk until it slightly thickens (about 1 minute).
5. One at a time, whisk in the remaining ingredients: beer (optional), Worcestershire sauce, Dijon mustard, garlic powder, paprika, salt and cheese.
6. Remove from heat and pour into a serving dish.
7. Sprinkle with extra cheese, if desired.
Dip Tip! If your dip seems thin when you first remove it from the stove, give it a few minutes! It will quickly thicken up naturally.
