We’re having to get a little creative this week to pull off big caterings. We really are sorry for the inconvenience.

We didn’t want to have to do it, but after analyzing everything we are adjusting some hours this week.

We will be closed for lunch Tuesday and Friday and are delaying our open on Saturday until 5 pm.

Help wanted: Where did all the Memphis restaurant workers go?

I know this article is behind a paywall. It's not worth the $1 to read it, but the restaurant industry nationwide is fighting a battle.

I've been harping on this to anyone who would listen for a year. Locally, in Marshall County, it's only going to get worse. So many more restaurants are coming, but there's no one to work them. There's not even bad, unreliable, drug-addicted people to hire just so you can turnaround a week later to fire. There's literally no one showing up.

Every restaurant in this county is begging for help. No one is showing up. The reason is simple. It's two fold. The government bought our workers with free money, that isn't so free. Stimmy's, unemployment (even though EVERYONE is hiring), child tax credits that will soon be prepaid beginning in July. That's the first part.

The second part is a total lack of young kids, high school aged, that are willing to work. I don't want to get into a parenting/education system debate yet, so I will just leave it at this....16-20 year old kids that are willing to work are in short supply.

The co-op/work based learning system in Marshall County is completely broken. It has been for a decade, but continues to get worse.

The restaurant industry has been casted in a negative light for decades. The labels and social stigmas of getting jobs in the industry aren't new, but they are wrong and they were ALWAYS wrong. I'm so disgusted with hearing the same stigmas and prejudiced labels that I won't even repeat one.

What I will say is how incredible and awesome the restaurant industry is. It creates winners. It molds children into adults. It takes social outcasts and gives them confidence, hope, swag, purpose and meaning. My greatest friendships were forged inside the walls at 1110 N Germantown Pkwy, Cordova, Tn. I played football, basketball, and baseball for most of my high school years. I always worked at least 3 days a week at the OB (Outback Steakhouse). I wouldn't be who I am now without those 3 shifts a week.

The restaurant industry taught me and gave me more confidence than any class or social event I showed up to in high school or college. It gave me a family. It gave me a team. Whatever problems I had at school disappeared when I went to work, because I knew that everyone was pulling the same rope. Ten, twenty or thirty year age differences be damned we were all the same for each and every shift, just winning.

Here I am 22 years later still in the same business for the same reasons. I've been so fortunate to be at Papa Dubi's Restaurant and witness so many young people grow into adults in front of me. I know that without the experience and grit of the restaurant industry they wouldn't be as complete adults, leaders, mothers and fathers as they are now.

Our alumni list is ever growing. I know for a fact that every single success story was nurtured through the rigorous grind of a rush. These restaurant experiences sharpened their skills to become community leaders, business owners, engineers, teachers, coaches, accountants, welders, machinists, nurses, mothers, fathers, and just all around bad ass people.

There's not a better job to teach you teamwork, sense of urgency, accuracy, pressure under fire, or accountability than the restaurant industry. You get all of this while making friends for life and real money.

I say all of this because I am concerned for the future of the restaurant industry. I'm not concerned for me or Papa Dubi's personally. (We're blessed with a large family, an always incredible staff, and an ability to figure it out). But I am concerned for the general mindset of how our culture has shifted to being allergic to this type of work. The restaurant industry isn't for everyone. It really isn't, but it is an industry that everyone needs to experience. There's nothing better than being triple sat, in the weeds, down 4 shrimp dinners-a whole dill-two combos-four cat dinners-two boom booms and a whole mushroom. There's no better social skill course than getting cussed out by a 60 year old that's pi**ed because her fries are too crispy.

Restaurants all across town are doing record sales. Marshall Co is booming. There's not that many restaurants here. Unless something changes in work force habits, you're going to see a rapid decline in quality and service.

At Papa Dubi's, we've already cut our hours to deal with a lack of employment. We are not going to sacrifice the quality of food or service. We are only going to adjust our hours to accommodate the lack of staffing. If you see us closing a random weekend or weekday it's because we need it to recover, prep, breathe. It's hit that level. We're so thankful for our staff now. They're awesome. The quality of people we have is 100. We're just about 5 short. As is every single restaurant in town.

If you like eating out at restaurants and want your high school aged kids to learn more than they're learning in the broken "covid" system schools are claiming they're teaching, encourage them to work in a restaurant!

We’ve teamed with awesome people and companies Chambless King Architects and Moore Contracting, LLC to make this dream a reality.

We’d like to thank Mayor Honea and the city council for supporting and pushing us in this direction.

We look forwarding to hosting many great meals and memories at our new Papa Dubi’s campus.

“The 5,500-square-foot restaurant will sit on the southwest corner of a 2.5-acre parcel with views from U.S. Highway 431 heading south. It will be the first indoor/outdoor dining campus in Marshall County. The u-shaped building includes a main dining area and outdoor covered patio that surrounds a central courtyard. A full bar wraps from the covered patio to the interior with beer taps directly connected to the walk-in cooler. The kitchen and bathrooms buffer parking from the dining space and allow for direct guest interaction through a drive-thru window. The main dining room is defined by low-dividing walls and features high windows to fill the space with natural light and offer views into the courtyard.

The rear of the site was designed to allow for future expansion to potentially include a bar annex, amphitheater for live music, children’s play area, and space for community crawfish boils.”

We braved the crowd and a wait at Papa Dubi's last night and it was well worth it! I had Patrick's scallops (which was an appetizer) and a side salad and some cajun rice. I couldn't begin to eat it all except for the scallops! Patrick makes the most fantastic sea scallops in a butter sauce I have ever had and the number of scallops is more than generous. I had five large ones and four small ones - and this was an appetizer! I am hoping at some time they will add it to the menu but I can be satisfied by having it as an occasional surprise. Guys, keep up the great work! You are appreciated.
