Let's see what Aiden is up to while working at Broc Cellars this week:
You know Chef Drew loves this question: What has been your personal + professional best of this last week?
"My personal best for this past week was exploring parts of Berkeley and San Francisco. I usually just walk around and take photos of different parts of these areas. There is so much to see! My professional best was taking samples of all the different wines. It’s really fun to taste the wine at different points in its fermentation. Everything is tasting great!"
Has there been a piece of equipment that has really stuck out to you so far?
"The coolest piece of equipment is definitely the one and only ‘Big Red’. It’s a 30 foot tall tank stored with the barrels. We just took wine out of it, but I hope I can be a part of adding new wine to this behemoth."
Next time you pour a glass of Broc Cellars back at the restaurant, what’s the first memory that’s going to pop into your head?
"I think my first memory will be the delicious smell of the grapes. We take samples of all the wine, every day. Every time I smell or taste the wine throughout its fermentation, it brings a smile to my face."
What’s one thing guests back home would be shocked to learn about how this wine actually gets made?
"They would probably be shocked at how tedious a lot of our day to day tasks are. There are so many steps that go into the process. You don’t really think about it when you’re enjoying a bottle, but so much work went into it. You always have to know what’s happening next and how you’re going to prepare."
What has been your best bite you’ve had in California so far?
"It’s hard to choose, there are so many great places to eat. I just tried this sushi place and I ordered a salmon skin roll. The roll had crispy salmon skin, eel sauce, fresh avocado, sesame seeds, and topped with salmon roe. That would definitely be my pick for this week.
