What is chicory coffee?
We get this question pretty often at the trailer.
Chicory is a plant in the same family as the dandelion. The part that goes into coffee is the root, which is roasted until it develops toasted, caramelized notes and a mild natural sweetness. When it’s blended with coffee, it adds body and a deeper flavor — the kind of character associated with traditional New Orleans-style coffee.
The plant was used in ancient Egypt. Later, roasted chicory showed up in Holland and Germany as a coffee alternative. It really took off in France during the Napoleonic Wars, when Napoleon’s blockade cut off regular coffee supplies. French settlers and traders then carried the habit with them to Canada, the Caribbean, and eventually to New Orleans.
In New Orleans it stuck for practical reasons. During the Civil War, the Union naval blockade of the Port of New Orleans stopped most coffee shipments. People stretched what little coffee they had by mixing in roasted chicory root. What started as a wartime necessity became a preferred taste, and the blend remains a signature of New Orleans coffee culture.
That’s the short version of how chicory ended up in our cups. Come by and try it with a beignet if you haven’t already. ☕
