BREAD RECIPE:
150g active sourdough starter
340g warm water
40g sugar
20g molasses
550g bread flour
14g salt
INCLUSIONS:
100g shredded carrots
70g pecans
50g sultanas
SPICE BLEND:
40g sugar
20g flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
Mix dough together. Let rest for 45-60min.
Add in Carrots, Pecans and Sultanas. Work first set of stretch and folds.
Rest another 45-60min.
Add in Spice Blend. Work second set of stretch and folds.
Work another two sets of stretch and folds spaced an hour apart. Let rise until dough is nearly doubled.
Shape, let rest on the counter for another 30-45min, then cover and chill in fridge overnight.
Bake at 450°F for 45-55 min or until center is 205°F. If using a Dutch Oven keep the loaf covered for the first 25min of baking.
