Dried beans are cheap, delicious, nutritious and easy to cook! No soaking required with an instant pot. If you want aquafaba for gravy, broth, or meringues use only chickpeas.

However, I save the mixed-bean water after cooking to make delicious gravy and broth base.

Just be aware that all of those lovely bean compounds that give you gas are concentrated in the bean water. Make sure to add a little baking soda to whatever you're making with the bean water to reduce gas. 🚫💨
